Honey cake – a delight that combines the natural sweetness of honey with the creaminess of sour cream and dark chocolate. This recipe is not just a simple cake, but a culinary experience that can quickly become your household's favorite. With a rich history and a fine texture, this cake is perfect for any occasion, from family evenings to festive meals.

Preparation time: 30 minutes
Baking time: 15 minutes
Cooling time: 6 hours
Number of servings: 12

Ingredients:

*For the base:*
- 3 large eggs (about 180 g)
- 200 g granulated sugar
- 2 tablespoons of honey
- 1 teaspoon baking soda
- ~350 g flour (you may need a little more or less)

*For the cream:*
- 800 g sour cream with 26% fat (make sure it is cold)
- 2 tablespoons powdered sugar

*For decoration:*
- 50 g dark chocolate (with at least 70% cocoa content)

Step by step:

1. Preparing the ingredients: Make sure all ingredients are at room temperature. Eggs and honey mix much better when they are not cold. You can also use high-quality sour cream for a richer cream.

2. Preparing the base:
- In a large bowl, beat the eggs together with the sugar, honey, and a pinch of salt. Use an electric mixer to achieve a homogeneous mixture.
- Transfer the mixture to a bowl over a double boiler (you can use a pot with boiling water) and stir constantly until the sugar completely dissolves. This will take about 5-7 minutes.
- Add the baking soda. You will notice that the mixture will puff up considerably, becoming similar to a light foam. This is the secret to a fluffy base!

3. Adding the flour:
- In another bowl, sift the flour. Gradually add the egg mixture, stirring with a spatula or wooden spoon. It is important not to overmix, just until homogeneous.
- If the mixture is too liquid, gradually add flour until you achieve a consistency slightly thicker than that of a loaf cake.

4. Baking the base:
- Preheat the oven to 180°C. Grease a baking pan with butter and dust with flour to prevent sticking.
- Pour the batter into the pan, spreading it with well-floured hands. Bake for 10-15 minutes or until nicely browned and passes the toothpick test.
- After baking, let the base cool in the pan, then gently shake off the flour with a brush.

5. Preparing the cream:
- In a cold bowl, start whipping the sour cream. After a few minutes, add the sugar and continue whipping until stiff peaks form. If you want an even more stable cream, you can add a whipped cream stabilizer.

6. Assembling the cake:
- In the pan where you baked the base, place the first layer of base, followed by 3/4 of the sour cream. Place the second base on top and cover with the remaining cream.
- Cover with plastic wrap and refrigerate for at least 6 hours, ideally overnight, to allow the flavors to meld.

7. Decorating the cake:
- After the cake has cooled, grate the dark chocolate on top for an elegant look and a contrast of flavors. Use a fine grater to achieve thin flakes.

8. Serving:
- Cut the cake into servings and serve it cold. It is delicious alongside a cup of hot tea or aromatic coffee. You can accompany it with fresh fruits or a berry sauce for an extra flavor boost.

Practical tips:
- Use high-quality honey, preferably local, to enhance the cake's flavor.
- You can experiment with different types of chocolate for decoration, depending on your preferences. Milk chocolate will add a sweeter taste, while white chocolate can provide a pleasant contrast.

Calories and nutritional benefits:
This honey cake contains approximately 300-400 calories per serving, depending on the serving size and ingredients used. The fat-rich sour cream provides a source of calcium and fat-soluble vitamins, while honey brings natural antioxidants. It is important to consume in moderation, but it is a healthier choice compared to store-bought cakes.

Possible variations:
- You can add ground nuts or almonds to the sour cream for extra texture.
- Substitute honey with maple syrup for a different but equally delicious flavor.

This honey cake is not just a dessert, but a true story that you can share with your loved ones. So, put on your chef's attire and let yourself be carried away by the enticing aromas of this delight!
