1. Preparing the meat: Start by cleaning the chicken thighs of any skin or fat. Rinse them well under cold running water. Place the meat in a large pot, add cold water to cover it completely, and set it over medium heat.
2. Skimming: As the water begins to boil, foam will rise to the surface. It is important to remove it with a skimmer, as it can affect the appearance and taste of the soup. Continue to skim until the water is clear.
