Chicken Dumpling Soup: A Comforting and Flavorful Recipe
When it comes to dishes that bring warmth and comfort, dumpling soup is a true favorite for many. This recipe not only combines the delicate flavors of chicken with the freshness of vegetables but also brings a touch of nostalgia from family meals. Today, I will show you how to prepare a chicken dumpling soup, soured with borscht, just the way my mother likes it. Even though I don’t consume it, it’s a recipe worth sharing!
Preparation time: 20 minutes
Cooking time: 1 hour
Total time: 1 hour 20 minutes
Servings: 6-8
Ingredients:
- 1 whole chicken (about 1.5 kg)
- 1/2 red bell pepper, diced
- 3 green onions, sliced
- 1 carrot, grated
- 1 parsnip, diced
- A handful of fresh parsley, chopped
- 1 liter of borscht (optional, but recommended for sourness)
- 1 Knorr cube or other concentrated soup
- Pepper, to taste
- Salt, to taste
For the dumplings:
- 2 eggs
- Wheat flour (about 150-200 g, but adjust as needed)
- Pepper, to taste
- Delikat or other seasoning, to preference
Preparation:
1. Start by filling your favorite pot with water, up to 3/4 full. This will be the base of your soup. Place the pot over medium heat.
2. Rinse the chicken well under cold running water, making sure to remove any impurities. Once cleaned, add it to the pot with water, along with a bit of pepper and a pinch of salt. Let it boil over medium heat.
3. Meanwhile, prepare the vegetables. Dice the red bell pepper, grate the carrot, chop the parsnip into cubes, and slice the green onions. These vegetables will add not only flavor but also color to your soup.
4. When the chicken is almost cooked (about 40-50 minutes), add the chopped vegetables to the pot. They will cook together with the meat and release wonderful aromas.
5. In the meantime, let’s prepare the dumplings. In a bowl, beat the two eggs with a pinch of salt and pepper. Gradually add the flour, stirring continuously until you achieve a homogeneous mixture that is not too soft but not too hard either.
6. Once the chicken is cooked, remove it from the pot and let it cool slightly. It can be used later in other dishes, such as salads or sandwiches.
7. Using a teaspoon, form dumplings from the semolina and egg mixture and carefully place them in the soup. Be careful not to break them. Let them boil for 10 minutes.
8. After 10 minutes, remove the pot from the heat and add a bit of cold water. This will help keep the dumplings fluffy. Put the pot back on the heat for another 5 minutes.
9. Finally, add the borscht (if you choose to use it) and a generous portion of chopped fresh parsley. Season with pepper and Delikat to taste. Let the soup boil for 2-3 minutes, and then it’s ready to serve!
Serving suggestions:
Dumpling soup is perfect served hot, alongside a slice of fresh bread, or even on its own, in warm bowls. You can also add some croutons for extra texture.
Frequently asked questions:
1. Can I replace the chicken with another type of meat?
Of course! You can use turkey or even beef, but the cooking time will vary depending on the type of meat chosen.
2. How can I make the soup spicier?
If you like spicy food, you can add a few slices of hot pepper or spices like hot paprika.
3. Can I make this soup without borscht?
Absolutely! If you prefer a less sour soup, you can omit the borscht and enjoy the natural flavors of the vegetables and chicken.
Nutritional benefits:
This dumpling soup is an excellent source of protein from the chicken and vitamins from the vegetables. Maintaining a balanced diet, the soup can be a healthy option, rich in nutrients, ideal for cold periods or on days when you need a touch of comfort.
Possible variations:
If you want to personalize the recipe, you can add other vegetables, such as zucchini or green beans. You can also experiment with different herbs, such as thyme or dill, to give the soup a unique flavor.
