Ingredients:

For the dough:

- a pinch of salt
- fresh yeast the size of a walnut (or 7 g dry yeast)
- vanilla essence
- 250-300 g flour
- vanilla sugar for decoration

- 1 kg fresh cherries
- 3 tablespoons semolina
- 1 cup sugar
- 1 cup water

Preparation method:

1. Preparing the dough: In a large bowl, mix the yeast with the sugar until it becomes a paste. Add the lukewarm milk, egg, vanilla essence, salt, and 50 g of the melted butter. Mix well, then gradually add the flour, mixing with a spatula or your hands until you obtain a soft but elastic dough.

2. Let the dough rise: Cover the bowl with a clean towel and let the dough rise in a warm place, away from drafts, until it doubles in volume, about 30 minutes.

3. Preparing the filling: Meanwhile, wash the cherries, remove the stems, and pit them. In a saucepan, bring the water and sugar to a boil, stirring occasionally, until a thicker syrup forms. Add the cherries and let them boil for 2-3 minutes, then remove the saucepan from heat and let the cherries cool in the syrup. Drain them well and mix them with the semolina, which will absorb the excess juice.

4. Forming the strudel: After the dough has risen, turn it out onto a lightly floured work surface. Roll it out into a thin sheet, brush with the remaining melted butter. Sprinkle the cherry filling over the entire surface of the sheet, leaving free edges. Carefully roll the sheet into a tight cylinder, then wrap it in plastic wrap and refrigerate for 15 minutes.

5. Baking: Preheat the oven to 180°C. Remove the roll from the refrigerator, cut it into pieces of 5-6 cm and place them in a greased and floured baking tray. Brush the surface with beaten egg and sprinkle with vanilla sugar. Bake the strudel for 30-35 minutes or until golden and crispy.
