- 1 kg chicken thighs with bone (we used free-range chicken for a more intense flavor)
- 1 kg red potatoes (if they are new, peeling is not necessary)
- 100 ml vegetable oil
- 2 tablespoons of butter
- 1 tablespoon dried oregano
- 1 glass of white wine (for a special taste)
- 6 cloves of garlic
- 1 cup frozen green peas
- Salt and pepper to taste
- Fresh chopped parsley for garnish
- Clear chicken broth or water (if you don't have chicken broth, water will suffice)

Step 1: Preparing the ingredients

Start by washing the chicken thighs well under cold running water. Make sure to dry them with a paper towel to remove excess water. Season each piece with salt and pepper. This step is essential for ensuring a uniform and savory taste.

Step 2: Cleaning and cutting the potatoes

Wash and peel the potatoes, cutting them into thick slices of about 1.5 cm (rounds). If you are using new potatoes, I recommend leaving the skin on to preserve the flavor and nutrients. Sprinkle a little salt on the potatoes to prepare them for frying.

Step 3: Frying the potatoes

In a large skillet, add the oil and butter over medium heat. When the butter has completely melted, add the sliced potatoes and fry them on both sides until they become golden and crispy. This process will give the potatoes a delicious texture. Once done, remove them from the skillet and set them aside.

Step 4: Preparing the chicken

In the same skillet, add the chicken thighs, making sure to fry them skin-side down first. This will help achieve a crispy and flavorful skin. Once they have a nice color, turn them over and fry the other side as well. When the chicken is almost done, add the garlic slices. Be careful, as garlic can burn quickly! Add it a few minutes before removing the chicken from the skillet to give it a subtle flavor without becoming bitter.

Step 5: Combining the ingredients

Reintroduce the potatoes into the skillet along with the chicken. Pour in the white wine and, if necessary, a little water or clear chicken broth. This step will help create a delicious sauce. Season with dried oregano and add more salt and pepper to taste.
