Gift Cake with Yogurt and Jellies - A Delicacy for Two Helens

On this special day, when my mother and mother-in-law celebrate their birthdays, I decided to surprise them with a special cake that reflects the love and appreciation I have for them. This gift cake is perfect for anniversaries and can be made quickly, featuring a delicious combination of flavors and textures. Let's get started!

Ingredients for the base:
- 2 large eggs
- 4 tablespoons of flour
- 2 tablespoons of sugar
- 4 tablespoons of water
- 1 teaspoon of baking powder
- Vanilla essence

Ingredients for the yogurt cream:
- 1 peach yogurt (preferably with a higher fat content for a richer cream)
- 1 packet of gelatin
- 1 tablespoon of granulated sugar
- 1 packet of dessert cream (200 ml milk)

Ingredients for decoration:
- Lemon jellies
- 3 slices of mandarin
- 1 slice of kiwi
- Whipped cream
- Green coconut for decoration

Preparation:

1. Preheat the oven to 180°C. Prepare a heart-shaped cake pan (or a round one) by lining it with baking paper. This step will prevent the base from sticking and make it easier to remove the cake.

2. In a bowl, separate the egg whites from the yolks. Beat the egg whites with a pinch of salt until frothy. Gradually add the sugar and continue mixing until you achieve a firm meringue.

3. Add the yolks, water, flour, baking powder, and vanilla essence. Gently mix the ingredients with a spatula to preserve the air in the egg whites.

4. Pour the mixture into the prepared pan and bake in the oven for 15-20 minutes, or until the base is golden and passes the toothpick test. After baking, let it cool in the pan for 5 minutes, then remove it to a cooling rack.

5. Meanwhile, prepare the cream: mix the dessert cream powder with the milk according to the package instructions until it becomes a thick and fluffy foam. Reserve 2-3 tablespoons of this whipped cream for decoration.

6. In another bowl, mix the yogurt with the sugar. Prepare the gelatin according to the package instructions. Once cooled, pour the gelatin in a thin stream into the yogurt and whipped cream mixture, stirring to achieve a uniform composition. Place the cream in the refrigerator for 5 minutes.

7. Soak the base with a syrup made of water and sugar, or with fruit juice, then spread the yogurt cream evenly over the cooled base.

8. Decorate the cake with lemon jellies, slices of mandarin and kiwi, add whipped cream, and sprinkle green coconut for a festive look.

9. Leave the cake in the refrigerator for an hour to firm up the cream and blend the flavors.

Serving suggestions:
The cake can be served with a sauce of fresh fruits or a scoop of vanilla ice cream for a delicious contrast. This simple gift cake recipe will bring a smile to the faces of your loved ones and turn the celebration into a memorable moment. Happy birthday to the two Helens!
