Braided Buns
To prepare these delicious potato rolls, we start by boiling the potatoes with their skins in salted water. This step is essential to ensure a soft and pleasant texture of the dough. Once the potatoes are cooked, we take them out of the water, let them cool slightly, then peel and mash them well. It is important to let the mashed potatoes cool completely to avoid affecting the dough rising process.
Meanwhile, we take care of the starter. We dissolve the yeast in 100 ml of warm water, adding a teaspoon of salt. This combination will activate the yeast, allowing it to ferment and contribute to the final volume of the rolls. We pour this starter into the center of the flour, which has been previously placed in a large bowl. We mix gently until we obtain a homogeneous composition, which we let rise, covered with a clean towel, in a warm place for about 15-20 minutes.
After the starter has risen, we add the mashed potatoes, a heaping tablespoon of salt, and warm water, mixing until we obtain a dough that is not too hard, but also not too soft. It is essential to knead the dough well until it becomes elastic and small air bubbles appear. This process will help achieve fluffy and aromatic rolls. After kneading, we let the dough rise again, covered, until it doubles in volume.
When the dough is ready, we sprinkle the table with flour and pour the risen dough. We divide it into smaller pieces, which we carefully roll out into wider strips. These strips will be cut into three, making sure that one end overlaps to facilitate braiding. Thus, we braid each set of three strips, forming beautiful rolls. After we finish braiding, we place the rolls on a baking tray lined with parchment paper, having the closed side down to maintain their shape.
At this point, we preheat the oven to a high temperature and let the rolls rise in the tray for about 30 minutes. It is important to place a vessel with cold water on the oven rack, as the steam will help achieve a crispy crust. After they have risen, we place the tray in the oven. At first, we bake the rolls at high heat for 15 minutes, then reduce the temperature by half to allow them to bake evenly. Finally, we wait for them to turn beautifully golden on top, and their aroma will fill the whole house.
