Step 1: Preparing the layers
Start by separating the egg whites from the yolks. Beat the egg whites with a mixer on high speed until foamy. Gradually add the granulated sugar and vanilla sugar, continuing to mix until you achieve a firm and glossy meringue. This step is crucial for the structure of your roll.
