To prepare these delicious chicken meatballs, we will start by washing the meat in cold water, ensuring it is clean and ready for cooking. Meanwhile, we take care of the vegetables: the onion and parsley, which we will chop with a knife, but not too finely, as we will process them in the food processor. Cutting the vegetables into larger pieces helps the processor to process them evenly, keeping their flavors intact.

In a large bowl, we add the diced chicken breast, onion, crushed garlic, chopped parsley, olive oil, and our preferred spices, such as salt, pepper, and perhaps even a hint of sweet paprika for an extra flavor boost. We mix with a spoon, being careful to combine all the ingredients well so that the flavors intertwine. Once we have a homogeneous mixture, we transfer the composition to the food processor and process until we obtain a fine paste, but not too ground, to maintain a pleasant texture.

Once we have the paste, we place it in a clean bowl and add a lightly beaten egg. This will help bind the ingredients, giving the meatballs a good consistency. We also add breadcrumbs, mixing again with a spoon until homogeneous. It is important to adjust the amount of breadcrumbs according to the size of the egg, as it can vary; if the mixture seems too wet, we can add another 10 grams of breadcrumbs.

After obtaining a well-bound composition, we start shaping the meatballs. We can moisten our hands with a little oil to prevent the mixture from sticking and form the meatballs to the desired size. We carefully place them on a baking tray lined with parchment paper, leaving a little space between them for even baking.

We preheat the oven to 180 degrees Celsius and place the tray with meatballs inside, letting them bake for about 30-35 minutes. It is important to watch them in the last minutes of baking to ensure they become slightly golden and crispy on top. They will be excellent served warm, and for an even healthier meal, we can accompany them with oven-baked zucchini chips, which add a delicious contrast. These meatballs are not only tasty but also diet-friendly, making them a perfect choice for a light lunch or a comforting dinner. Enjoy them with your loved ones!
