Baking time: 30 minutes
Number of servings: 4
I invite you to indulge in a monk's vegetable stew with rice, a simple and healthy recipe that combines the authentic flavors of vegetables cooked in a Romanian clay pot. This cooking method preserves all the nutrients and intensifies the flavors, giving you a delicious and colorful dish.
Ingredients:
- 2 bell peppers of different colors (green, red, yellow)
- 1 green zucchini
- 200 g flat beans (yellow and green)
- 1 large tomato, diced
- 1 carrot, peeled and sliced
- 1 cup of rice (preferably basmati or pilaf rice)
- 2 tablespoons of olive oil
- Salt and freshly ground pepper, to taste
- 1 cup of water
- Fresh herbs (dill and parsley), finely chopped
Preparation:
1. Preparing the vegetables:
Start by washing and peeling all the vegetables. Cut the peppers into strips, the zucchini into cubes, the carrot into thin rounds, and the beans into 3-4 cm pieces. Make sure to use fresh, seasonal vegetables to benefit from the best flavors.
2. Seasoning:
In a large bowl, add all the chopped vegetables and season them with salt and freshly ground pepper. Mix well to ensure the vegetables are evenly coated with the spices.
3. Arranging in the pot:
Transfer the seasoned vegetables to the Romanian clay pot. Add 2 tablespoons of olive oil over them and one cup of water. Season with chopped herbs, leaving some for decoration at the end.
4. Baking:
Preheat the oven to 210 degrees Celsius. Cover the pot with a lid and place it in the oven. Let it bake for 30 minutes. This step is crucial for the vegetables to soften and the flavors to blend.
5. Adding the rice:
After 30 minutes, carefully remove the pot from the oven. Add the pre-washed rice and enough water to cover the rice (about 1/2 cup). Gently stir, then put the lid back on and return the pot to the oven for another 15-20 minutes, until the rice is cooked and has absorbed all the water.
6. Finishing the dish:
When the stew is ready, take it out of the oven and let it rest for a few minutes. Add the remaining fresh herbs, dill, and parsley, for an extra boost of flavor and freshness.
Serving suggestions:
This monk's stew is served warm, alongside a slice of fresh bread or as a side dish to roast chicken or fish. You can also add a garlic yogurt sauce for an extra touch of freshness.
Possible variations:
You can experiment with other vegetables depending on the season or personal preferences. Potatoes, cauliflower, or even mushrooms are excellent options. You can also add spices like sweet paprika or herbs de Provence to diversify the flavors.
This monk's vegetable stew with rice is a quick, healthy, and colorful recipe, perfect for a family dinner or to impress friends. Enjoy every bite and let yourself be carried away by its delightful flavors!
