Mini Pavlova
Meringue is a classic dessert that brings joy to the tables of loved ones, and its preparation can be a satisfying experience. This recipe is perfect for utilizing leftover egg whites from other dishes and will reward you with a crispy exterior but soft and fluffy interior, offering a pleasant contrast of textures.
To start, prepare all the necessary ingredients: fresh egg whites, granulated sugar, a pinch of salt, vinegar, and cornstarch. Make sure the bowl in which you will beat the egg whites is clean and dry, as any trace of fat could prevent achieving a perfect foam. In a large bowl, add the egg whites and the pinch of salt, then begin to beat them with an electric mixer on medium speed until you achieve a stiff foam. This is the moment to add the sugar, but do not do it all at once, rather in 5-6 increments. Continue mixing so that the sugar completely dissolves into the egg white foam.
Once the sugar is well incorporated, add the vinegar, which will help the meringue maintain its structure during baking. Finally, fold in the cornstarch using a spatula, mixing gently so as not to lose air from the mixture. Now that you have achieved a light and shiny foam, line a baking tray with parchment paper and, using a pastry syringe, form evenly sized circles, making sure to leave space between them, as the meringue will rise during baking.
Preheat the oven to a very low temperature and place the tray with the meringue inside. Bake for about an hour and a quarter, and at the end, allow them to cool in the oven for 30 minutes. This will help achieve that ideal texture. Once they have completely cooled, you can carefully transfer them to a serving platter.
For decoration, break the chocolate into small pieces and mix it with 3 tablespoons of cream, then heat the mixture on low, being careful not to boil. Once melted, let the chocolate cool slightly, then fold it in with the remaining whipped cream. This mixture will add an intense flavor and creamy texture to your meringues.
To finish the dish, each meringue is topped with a layer of whipped cream and fresh fruits such as strawberries, raspberries, or blueberries, which bring a contrast of acidity.
