### Required Ingredients:
For the base:
- 9 egg whites
- 250 g sugar
- 1 teaspoon baking powder
- 200 g ground nuts
- 50 g chopped nuts
- 4 tablespoons flour
For the cream:
- 9 egg yolks
- 5 tablespoons sugar
- 2 packets vanilla sugar
- 140 ml milk
- 1 package (250 g) butter
For the krantz:
- 3 tablespoons sugar
### Preparing the Cake:
#### Step 1: Preparing the Base
1. Preheat the oven: Start by preheating the oven to 180°C, so it’s ready to bake the base as soon as you insert it.
2. Beating the egg whites: In a large bowl, beat the egg whites with a pinch of salt until you get a fluffy foam. This step is essential for obtaining an airy base.
3. Adding sugar: Start adding sugar, one tablespoon at a time, continuing to beat well after each addition. When you have incorporated all the sugar, the foam should be firm and shiny.
4. Incorporating the nuts: Gently fold in the ground nuts, one tablespoon at a time, using a spatula and mixing lightly from the bottom up to maintain the aeration of the mixture.
5. Flour and baking powder: Mix the flour with the baking powder and gradually add it, continuing to mix carefully. Finally, add the chopped nuts for texture.
6. Baking: Line a baking tray with parchment paper, pour in the mixture, and level it. Bake in the preheated oven for 25 minutes. Check with a toothpick to see if the base is properly baked.
#### Step 2: Preparing the Cream
1. Mixing the ingredients: In a saucepan, mix the egg yolks with the sugar, vanilla sugar, and milk.
2. Thickening the cream: Place the mixture over steam (or on low heat), stirring constantly with a whisk until the cream thickens. This process may take a few minutes, so be patient.
3. Cooling and incorporating the butter: Once the cream has thickened, let it cool completely. Once cooled, beat the butter with a mixer until creamy. Gradually incorporate the egg yolk cream, one tablespoon at a time, mixing well after each addition.
#### Step 3: The Krantz
1. Preparing the krantz: In a small saucepan, melt the 3 tablespoons of sugar over medium heat. You will get a golden caramel.
2. Cooling: Pour the caramel onto a greased wooden board. Let it cool completely, then carefully peel it off.
3. Crushing: Use a knife or a schnitzel hammer to crush the krantz into small pieces.
#### Step 4: Assembling the Cake
1. Layering: Once the base has cooled completely, spread the cream evenly over it, leveling well.
2. Adding the krantz: Sprinkle the crushed krantz over the cream, giving the cake a crunchy touch.
3. Cooling: Let the cake cool for at least an hour before cutting it into squares.
### Serving Suggestions:
The Yellow Cake is delicious served plain, but you can accompany it with vanilla ice cream or a fresh fruit sauce to add a touch of freshness.
### Possible Variations:
You can experiment with different types of nuts (hazelnuts, almonds) or add cocoa to the base for a chocolate flavor. Additionally, for a more intense taste, you can add a splash of rum essence to the cream.
Enjoy a refined cake that will surely become a favorite among your loved ones!
