So, let’s put on our aprons and discover together how to prepare a delicious meatball soup that will turn any meal into a celebration.

Preparation time: 20 minutes
Cooking time: 1 hour
Total time: 1 hour and 20 minutes
Servings: 6-8 servings

Ingredients

For the soup:
- 1 large onion
- 2 carrots
- 1 small celery
- 1 parsley root + leaves
- 2 bell peppers (preferably different colors for a more appealing look)
- 1 zucchini
- 4-5 ripe tomatoes
- 2 tablespoons of rice (preferably long grain)
- 1 bunch of fresh lovage
- 0.5 liters of borscht (or to taste)

For the meatballs:
- 300 g minced meat (pork, beef, or a mix)
- 4 tablespoons of rice
- 1 tablespoon of semolina
- Salt, pepper, a little chopped dill
- 1 egg

Preparation

1. Preparing the vegetables
Start by peeling and chopping the onion, carrots, celery, parsley root, and bell peppers. Make sure the vegetables are cut into small cubes, as they will cook faster and blend perfectly into the soup.

2. Boiling the vegetables
In a large pot, add about 4 liters of water and bring it to a boil. Once the water starts boiling, add the chopped vegetables. Let them boil for about 15 minutes until they become slightly soft. This is also a great time to add salt, which will help extract the flavors from the vegetables.

3. Preparing the meatball mixture
Meanwhile, in a bowl, combine the minced meat with the rice, semolina, egg, chopped dill, salt, and pepper. Mix well until you achieve a homogeneous mixture. You can use your hands to ensure all ingredients are well integrated. If you like your meatballs more flavorful, you can also add a pinch of garlic or onion powder.

4. Forming the meatballs
With wet hands, form the meatballs into suitable sizes (about the size of a golf ball). Then, lightly coat them in flour to help them maintain their shape during boiling.

5. Adding the meatballs
After the vegetables have boiled for 15 minutes, add the meatballs, one by one, into the soup. It is important to add them carefully so as not to destroy their shape. Let the soup boil for about 1 hour until the meatballs are cooked and the rice in them is soft.

6. Adding the remaining ingredients
After 1 hour, add the diced zucchini and let it boil for 10 minutes. Then, add the peeled and diced tomatoes, and let it boil for another 10 minutes. The tomatoes will give a delicious taste and a pleasant acidity to the soup.

7. Finalizing the soup
When all ingredients are cooked, add the borscht. Let it boil for a few minutes, then turn off the heat. Add fresh parsley and lovage leaves for an extra flavor.

Serving

Meatball soup is served hot, enriched with a spoonful of sour cream if desired, and sprinkled with a little fresh dill or parsley. You can accompany the soup with a slice of freshly baked homemade bread to complete the culinary experience.
