Discover the charm of a simple and quick recipe, perfect for a delicious snack or to impress your guests. This recipe for cheese and oregano twists is ideal for those who love Mediterranean flavors and the fluffy texture of freshly baked dough.

Ingredients:

- 500 g wheat flour (choose type 000 for a fluffier dough)
- 25 g fresh yeast or 7 g dry yeast
- 2 teaspoons sugar
- 250 ml lukewarm milk (not hot, to avoid killing the yeast)
- 100 ml extra virgin olive oil
- 1 egg (for brushing)
- 300 g cheese (cottage cheese or feta, according to preference)
- 2 tablespoons dried oregano
- Salt and pepper to taste

Instructions:

1. Activating the yeast: In a small bowl, mix the yeast with 2 teaspoons of sugar and 50 ml of lukewarm milk. Let it sit for 10 minutes until a foam forms on the surface. This step is essential for ensuring good dough rising.

2. Preparing the dough: In a large bowl, combine the flour with a pinch of salt and oregano. Add the activated yeast, the remaining milk (200 ml), and olive oil. Mix well with a wooden spoon or your hands until the ingredients start to come together.

3. Kneading: Meanwhile, transfer the dough to a lightly floured surface and knead for about 10 minutes until it becomes elastic and smooth. If the dough is too sticky, you can add a little flour, but be careful not to overdo it.

4. Rising: Place the dough in a clean bowl, cover it with a damp towel, and let it rise in a warm place, away from drafts, for 1 hour, or until it doubles in volume.

5. Filling the twists: Once the dough has risen, roll it out on a floured surface, forming a rectangle about 1 cm thick. Evenly sprinkle the chosen cheese over the dough, then sprinkle oregano and season with salt and pepper to taste.

6. Twisting: Roll the dough tightly widthwise, forming a cylinder. Cut the cylinder into pieces about 3 cm long. Place the pieces on a baking tray lined with parchment paper, leaving a little space between them to expand during baking.

7. Brushing: Beat the egg and brush the surface of the twists with a kitchen brush. This step will give a pleasant golden color when baked.

8. Baking: Preheat the oven to 180°C. Bake the twists for 25 minutes or until golden and fluffy. Let them cool slightly before enjoying.

Practical Tips:

- You can experiment with various fillings by adding sautéed spinach, olives, or even prosciutto for a heartier option.
- If you prefer a stronger flavor, you can add a few slices of hot pepper or blue cheese.
- These twists are excellent warm but can also be enjoyed at room temperature, making them perfect for picnics or parties.

Serving suggestion: Serve the twists alongside a garlic and dill yogurt dip or a spiced tomato sauce. This appetizer will bring a touch of joy to any meal!

Savor every bite of these cheese and oregano twists and enjoy their delicious flavors. Bon appétit!
