Rustic Baguette

To prepare delicious baguettes like a baker, we will start by activating the yeast. In a small bowl, we mix the yeast with a little warm water, being careful that the water temperature is not too high, so the yeast does not get destroyed. Once the yeast has completely dissolved, we gradually add the flour and salt. It is important to use good quality flour, preferably type 550, to achieve a perfect texture.

Using our hands or a mixer with a hook, we work the dough until it becomes smooth and non-sticky. It is recommended to maintain vigorous movements so that the gluten develops properly. After the dough has been well kneaded, we place it in a clean bowl, covering it with a damp towel or plastic wrap. We let the dough rise at room temperature for about an hour, or until it doubles in volume.

After this period, we sprinkle a little flour on the work surface and remove the dough from the bowl. We fold it in half on the side, a technique known in baking as "turning." This step helps to strengthen the structure of the dough. We sprinkle flour on top again and cover it with a clean towel, letting the dough rest for 30 minutes.

After the 30 minutes, we divide the dough into three equal parts, being careful to use a sharp knife so as not to damage the structure. We form the baguettes by rolling each piece of dough on the work surface, giving them an elongated shape. We place the baguettes on a clean towel that we previously sprinkled with flour, leaving about 5 cm of space between them. We cover with plastic wrap or another damp towel and let them rise for another 30 minutes.

In the last 15 minutes of rising, we preheat the oven to 240 degrees Celsius and place a vessel with water at the bottom. The steam created by the water in the vessel will help form a crispy crust on the baguettes. After the 30 minutes have passed, we carefully transfer the baguettes to a baking tray, being careful not to crush them. We bake them in the oven for 18 minutes, until they become golden and crispy.

In the end, we enjoy the enticing aroma of fresh baguettes, with a crispy crust and a soft, airy crumb. Enjoy your meal!

 Ingredients: 500g of flour, 7g of dry yeast, 375ml of water, 5-10g of salt (depending on your taste), flour for working.
