Step by step: making Belobrească
1. Preparing the pastry
Start by preheating the oven to 150°C. In a large bowl, beat the egg whites with a mixer until frothy. Gradually add the sugar, continuing to mix until you have a firm, glossy meringue. Carefully fold in the ground walnuts and flour, stirring with a spatula to keep the air in the mixture.
Pour the mixture into two baking trays lined with baking paper and smooth the surface. Bake each sheet for about 30 minutes or until light golden and firm to the touch. Once baked, cool completely on a wire rack.
2. Making the custard
In a steaming pan, whisk the yolks with the sugar. Continue stirring until smooth and slightly lighter in color. This process will take about 10 minutes.
Separately, in a saucepan, bring the milk to a boil and add the vanilla pudding, stirring constantly. When puddings have thickened, remove from heat.
