To prepare a delicious strudel with ricotta and berries, start by thawing a sheet of puff pastry. It is important for the dough to be at room temperature so that it can be easily handled. Once thawed, use a rolling pin to slightly roll out the dough, making sure to achieve a rectangular shape.

In the center of the dough sheet, along its length, add a generous layer of ricotta mixed with the two eggs. This mixture will provide a creamy texture and rich flavor. Make sure the ricotta is well homogenized so that there are no lumps and it combines perfectly with the eggs. After spreading the ricotta, add an even layer of blueberries or other berries. If you are using frozen fruit, it is essential to thaw and drain them well to avoid soggy dough.

Sprinkle a mixture of sugar and vanilla sugar over the filling, adjusting the amount according to how sweet your fruit is. This step will add a touch of sweetness that will contrast perfectly with the acidity of the fruit. Now comes the interesting part: close the filling with the free edges of the dough. By bringing the edges of the dough over the filling, you will create a well-sealed package. Brush the edges with beaten egg to seal them.

After sealing the ends, fold the right edge of the dough, brush it with egg, then fold the left edge over the right, making sure not to roll the dough, but to wrap it carefully. This will allow the pastry to rise beautifully and evenly during baking. Once you have finished shaping the strudel, brush the entire surface with beaten egg to achieve a golden and shiny crust.

Transfer the strudel to a baking tray lined with parchment paper, placing it with the overlapping side up. Preheat the oven to a medium temperature and place the tray inside. Bake the strudel for about 40 minutes, or until the dough is well risen, baked, and has a tempting golden color. After removing it from the oven, let it cool slightly, then generously dust with vanilla powdered sugar. Served warm or at room temperature, this strudel will surely be a delight for all who taste it!
