To prepare these delicious coconut cookies, start by gathering all the necessary ingredients. You will need a package of coconut, egg whites, a fresh lemon, and of course, a bit of sugar to balance the taste. In a large bowl, add the coconut powder from the package. This will be the base ingredient, giving the cookies a fine texture and delicious flavor.
After adding the coconut, crack the egg whites into a separate bowl and beat them with a mixer until they become frothy. It is important that the egg whites are well beaten, as they will provide an airy structure to your cookies. Then add the grated lemon zest, which will add a touch of freshness and a special aroma. Don't forget to also add the freshly squeezed lemon juice, which will further enhance the final flavor.
Mix all the ingredients with the mixer until you obtain a homogeneous composition, but not too liquid. The mixture should have a slightly dense texture that allows for easy shaping of the cookies. Once you have finished shaping the cookies, preheat the oven to 170 degrees Celsius. Place the tray in the oven and let the cookies bake for 15 minutes. If you prefer a more golden crust, you can leave them at 180 degrees for almost 20 minutes, as I did. It is important to keep an eye on them, as each oven may bake differently. Once the cookies have an even color and a slightly golden texture, remove them from the oven and let them cool on a rack.
