Every year, before Christmas, I prepare Florio Liqueur. I have made it several times because it is quick to prepare and doesn't require much attention. The ingredients are simple, and all you have to do is mix them and have patience for at least a week. I like that there's no need to boil anything or follow complicated timings, so I can make this liqueur even on busier days. It can sit quietly in a cupboard until the holidays.

Ingredients

300-500 ml plum brandy or vodka (to taste; affects the final strength)
1 vial almond essence
700 ml cherry syrup
1 liter red wine (ideally semi-sweet)

Preparation method

1. Place the plum brandy or vodka in a large container, preferably glass or ceramic.
2. Pour the cherry syrup over the alcohol.
3. Add the red wine.
4. Add the almond essence.
5. Stir all the ingredients with a large spoon until well combined. No need for a mixer or special utensils.
6. Bottle the resulting liqueur in clean bottles with caps.
7. Leave the bottles in a cool, dark place for at least a week before consumption. During this time, the flavors meld together.

Florio Liqueur is quick to make and doesn't take up much space. You don't need special equipment, and the ingredients are easy to procure. I like that it keeps well and can be prepared well in advance of holidays or other events. It's easy to adapt if I want to make it weaker or stronger.

Tips

Use a clean, dry container for mixing, so you don't alter the final taste.
If you don't have almond essence, the liqueur will turn out quite simple, but I recommend not omitting it.

Substitutions

Plum brandy can be replaced with vodka, depending on what you have on hand or your taste preference.
Store-bought cherry syrup can be used if you don't make it at home; it's important that it is thicker, not too watery.
You can use another type of red wine, but the semi-sweet version balances the flavors well.

Variations

If you want a sweeter drink, add more cherry syrup or use a sweet red wine.
If you prefer a lower strength, use only 300 ml of alcohol.
For a different flavor, some add a few raisins or orange peel, but these do not appear in the classic version.

The strength of the drink depends on the alcohol chosen; with 500 ml of plum brandy, the alcohol content will be significant, over 15%. Storage and reheating

Florio Liqueur keeps well in the cold, in sealed bottles. It does not require refrigeration, but if you want to serve it cold, you can chill it a few hours beforehand. It is not reheated, does not require pasteurization or other interventions. It can be stored for at least a few months if the bottles are well sealed. If the liqueur changes taste or smells unpleasant, do not consume it.
