Soy Pâté
Soybeans are a versatile and nutritious ingredient, being an excellent source of plant-based protein. To prepare a delicious paste, we start by soaking the soybeans in water, letting them soften from evening until morning. It is important to follow this step, as hydrating the beans helps achieve a finer texture and a more pleasant taste. The next day, we wash the beans well to remove impurities and boil them together with a quartered onion, which will add a subtle flavor to the final paste.
In a separate pot, we boil the potatoes and carrots, also peeling them after they have boiled. They add a sweet and creamy note to the dish. After the soybeans have boiled, we strain them along with the onion and let them cool slightly. It is essential to keep about 100 ml of the water in which the soybeans were boiled, as this will be used to adjust the consistency of the paste in the blender. If the resulting paste turns out to be too thick, we can add more water to achieve the desired texture.
Once all the ingredients have cooled, we cut the potatoes and carrots into small pieces to facilitate the blending process. In the blender, we add the soybeans, the reserved water, the boiled onion, the potatoes, the carrots, the broth, the crushed garlic, and the oil. It is important to ensure that we have included all the necessary ingredients to achieve a smooth and tasty paste. We blend well, adjusting the consistency with the reserved liquid until we obtain a fine and creamy paste.
To provide a rich and aromatic flavor, we season the paste with salt, pepper, vegeta, marjoram, allspice, and oregano. It is recommended to taste the paste throughout the seasoning process so that we can adjust the flavors to our personal preferences. This soy paste can be served as an appetizer, on toasted bread, or as a filling for sandwiches, being not only delicious but also healthy. Enjoy the dish alongside a fresh salad or as part of a vegetarian platter!
Ingredients: 200 g soybeans, 3 carrots, 3 potatoes, 3 onions, 5 cloves of garlic, 1 tablespoon of broth, 150 ml of oil, 1/2 teaspoon of marjoram, 1/2 teaspoon of allspice, 1 teaspoon of oregano, salt, seasoning, and pepper to taste.
