Ingredients

- 6 eggs
- 6 tablespoons sugar
- 3 tablespoons oil
- 6 tablespoons flour
- 1 teaspoon baking powder
- 1 vanilla essence

*For the orange mousse:*
- 2 egg yolks
- 100 g sugar
- 2 tablespoons cornstarch
- 250 ml milk
- juice from 1 orange (~100 ml)
- 10 g gelatin
- 250 ml heavy cream

*For greasing the layers:*
- 150 g dark chocolate
- 50 g butter
- 50 ml heavy cream

Preparation

Step 1: Preparing the sponge
Start by separating the egg whites from the yolks. In a clean bowl, beat the egg whites with a pinch of salt. Gradually add half of the sugar, continuing to mix until you achieve a stiff and glossy meringue. It is important that the bowl is clean; otherwise, the egg whites will not whip properly.

In another bowl, beat the egg yolks together with the remaining sugar until the mixture turns white and creamy. Add the vanilla essence and mix well. Sift the flour together with the baking powder and incorporate it into the egg yolk mixture. Then, add the beaten egg whites, carefully folding them in with a spatula to avoid losing air.

Divide the batter into four equal parts and bake each layer in an 18 cm round pan lined with parchment paper for 10-15 minutes, until the edges start to brown and the sponge turns golden. After baking, remove the layers onto a rack and let them cool completely, without stacking them to avoid moisture formation.
