A simple and elegant dessert, mini grape tarts are perfect for any occasion. These tarts with a fluffy base and a fine vanilla cream are topped with juicy grapes, offering an explosion of flavors and textures. Follow the steps below to achieve a perfect result!

Ingredients needed:

For the base:
- 100 g soft butter
- 100 g sugar
- 1 vial vanilla essence
- 2 eggs
- 120 g flour
- 1 teaspoon baking powder
- 3 tablespoons milk

For the cream:
- 2 egg yolks
- 75 g sugar
- 3 heaping tablespoons cornstarch
- 200 ml milk
- 1 vial vanilla
- 5 g gelatin
- 150 ml whipped cream
- Grapes (preferably sweet varieties, like seedless)

For the syrup (optional):
- 50 g sugar
- 100 ml water

Preparation:

1. Preparing the dough:
In a bowl, cream the soft butter with the sugar and vanilla essence using a mixer or spatula. Continue to add the eggs one at a time, mixing well after each. This step is essential for achieving an airy dough.

2. Integrating dry ingredients:
Sifting the flour with the baking powder is important to avoid lumps. Add this mixture to the bowl with butter and eggs, and gradually incorporate. Finally, add the 3 tablespoons of milk and mix until you obtain a homogeneous dough.

3. Preparing the molds:
Grease the tart molds with butter and dust with flour to prevent sticking. Fill each mold with a heaping tablespoon of dough, being careful not to overfill them, as the dough will rise in the oven.

4. Baking:
Preheat the oven to 180°C and bake the mini tarts for about 20 minutes, or until golden. Let them cool in the molds for a few minutes, then carefully remove them onto a cooling rack.

5. Preparing the vanilla cream:
Heat the milk in a saucepan over low heat. In another bowl, whisk the egg yolks with the sugar until creamy, then add the vanilla and cornstarch, mixing well. Gradually pour the warm milk into the egg mixture, stirring constantly to prevent coagulation.

6. Cooking the cream:
Transfer the mixture to the saucepan where you heated the milk and cook over low heat, stirring constantly, until the cream thickens like a pudding. Soak the gelatin in cold water for 10 minutes, then dissolve it in the microwave for a few seconds. Incorporate the gelatin into the warm cream and let it cool.

7. Whipping the cream:
Whip the cream until stiff, and once the vanilla cream has completely cooled, gently fold the whipped cream into the vanilla cream to achieve an airy texture.

8. Assembling the mini tarts:
Use a piping bag to fill the mini tarts with vanilla cream. Cut the grapes into quarters and arrange them beautifully on top. If you desire extra moisture and flavor, you can prepare a simple syrup from water and sugar to pour over the tarts.

9. Cooling:
Keep the mini tarts in the refrigerator until serving, so that the flavors blend perfectly.

Serving suggestion:
These mini grape tarts are ideal for a festive meal or as an elegant dessert for a summer evening. You can experiment with different seasonal fruits, such as raspberries or blueberries, to add a pop of color and tartness.

Now you are ready to impress family and friends with these mini grape tarts! Prepare them with love and enjoy every bite.
