To prepare a delicious dessert, we start by organizing the necessary ingredients. It is essential to have everything at hand before we begin. We will need fresh eggs, sugar, flour, baking powder, butter, coffee, and chocolate. We start with preparing the base. Carefully separate the egg whites from the yolks; it is important that the bowl we are using is clean and free of grease to achieve a perfect foam. In a food processor, we put the egg whites together with a pinch of salt and the sugar. We mix at high speed until we achieve a firm and glossy foam that forms peaks.

Meanwhile, in another bowl, we mix the flour with the baking powder, ensuring there are no lumps. Once the egg whites have reached the desired consistency, we add the yolks, gently mixing to avoid losing air in the mixture. Immediately after, we incorporate the flour mixture, continuing to mix at medium speed. It is important not to overmix to keep the base airy.

We pour the mixture into the prepared baking pan, greased with butter and sprinkled with flour or lined with baking paper. We bake the base in a preheated oven at 180°C for about 20 minutes. After it has baked, we remove the base and let it cool on a rack, then cut it into three equal circles.

For the delicious cream, we put the sugar and coffee in a saucepan and bring them to a boil. It is important to have a kitchen thermometer, as the syrup must reach a temperature of 118°C. In another bowl, we beat the egg whites with a pinch of salt. When the syrup is ready, we slowly pour it over the egg whites while the mixer is running continuously. We continue to mix until the foam reaches room temperature.

Meanwhile, we cut the butter into small cubes and, with the mixer off, gradually add it to the egg white foam, mixing with a spatula. Now, we take care of the syrup: we boil all the ingredients until the sugar completely dissolves. We let it cool slightly and then soak each circle of base, ensuring they absorb all the flavor.

On a platter, we alternately place a circle of base, a layer of cream, and crumbled chocolate, continuing until we finish all the ingredients. We decorate as desired, using grated chocolate, fruits, or even whipped cream. We let the dessert chill for a few hours to firm up and combine the flavors. When we are ready to serve, we cut generous portions and enjoy every bite. Enjoy your meal!
