To prepare a delicious almond and chocolate cake recipe, we start by ensuring we have all the ingredients at hand and that we follow the steps carefully to achieve the best results. The first essential step is to preheat the oven to 175 degrees Celsius, so it is ready for baking as soon as we finish preparing the dough.
In a large bowl, we add the softened butter, sugar, and vanilla sugar. Using a mixer, we beat them together at medium speed until we obtain a smooth and creamy mixture. This mixture will form the sweet base of our cakes. Subsequently, we will start incorporating the eggs, adding one at a time, and mixing well after each. It is important that each egg is fully integrated into our mixture before adding the next one, to ensure that the cake will have a uniform texture.
In another bowl, we will combine the ground almonds, freshly sifted flour, baking powder, and finely grated chocolate. These dry ingredients will give our cakes a rich flavor and a pleasant consistency. The mixture of dry ingredients will be gradually added to the bowl with butter, sugar, and eggs, mixing constantly to achieve a uniform dough. Now we are ready to prepare the molds in which we will bake the cakes.
We fill the molds with dough, being careful not to exceed 3/4 of their height, as the dough will rise during baking. The cakes bake in the oven for about 40 minutes, but it is recommended to check with a cake tester if they are done by inserting it into the center of one and ensuring it comes out clean. Once the cakes are baked, we let them cool on a rack, which will keep their slightly crispy texture on the outside and soft on the inside.
While the cakes are cooling, we can prepare the glaze. In a bowl, we mix the egg white with sugar, cornstarch, and lemon juice. We continue to mix until we obtain a homogeneous mixture, and the sugar has completely dissolved. This glaze will add a layer of sweetness and a glossy touch to our cakes. Using a piping bag, we decorate the baked cakes with the obtained glaze, creating beautiful and attractive patterns.
For a colorful and festive finish, we decorate the cakes with colored sugar candies, suitable for our taste and preferences. Thus, the cakes will not only be delicious but also very appealing, perfect for any occasion or simply to indulge ourselves. Enjoy the results of your work!
