Singapore noodles are an excellent choice when you want to impress with a quick and aromatic recipe. This noodle recipe is a perfect combination of fresh ingredients and aromatic spices, offering a unique culinary experience. Let's start the kitchen adventure!

Ingredients:
- 3 nests of noodles (you can use rice noodles or soy noodles)
- 2 tablespoons of oil (sunflower oil or sesame oil are excellent options)
- 100 g broccoli (cut into small florets)
- 1 red bell pepper (sliced)
- 85 g corn (either fresh or canned)
- 2 cloves of garlic (minced)
- 1 chili pepper (optional, for added spice)
- 1 piece of ginger (about 2-3 cm, grated)
- 2 chicken breasts (cut into cubes)
- 100 g shrimp (peeled and deveined)
- 1 tablespoon of curry paste (choose your preferred type of curry: red, green, or yellow)
- 2 teaspoons of soy sauce (regular or light soy sauce, depending on your preference)
- 100 g bean sprouts (for added texture)
- 15 g fresh coriander (chopped)
- 4 green onions (sliced)

Step by step:

1. Start by preparing the noodles. Boil water in a large pot and, when it reaches boiling point, add the noodles. Let them soak according to the package instructions, then drain and rinse with cold water to prevent sticking.

2. Meanwhile, in a wok or large frying pan, heat 1 tablespoon of oil over medium heat. Add the chopped vegetables (broccoli, red bell pepper, and corn) and sauté for 2-3 minutes until they become crisp. This step will bring flavor and color to the dish.

3. Add the minced garlic, chili pepper (if using), and grated ginger. Continue cooking for 30 seconds, stirring constantly to avoid burning the garlic.

4. Transfer the vegetables to a bowl and set them aside for later. In the same wok, add the remaining oil and, when it gets hot, add the chicken cubes. Cook until they are lightly browned, about 4-5 minutes. Then, add the shrimp and cook until they turn opaque.

5. Add the curry paste to the wok and fry for a few seconds until it releases an intense aroma. Pour in 150 ml of water and the soy sauce, mixing well to combine the ingredients.

6. Once the sauce starts to boil, add the drained noodles and bean sprouts. Mix well, ensuring the noodles are completely coated with the flavorful sauce.

7. Add back the vegetables, chicken, shrimp, green onions, and chopped coriander. Mix everything well to combine the flavors and achieve a homogeneous texture.

8. Serve the Singapore noodles on large plates, sprinkled with sesame seeds and fresh coriander leaves for an attractive presentation.

Serving suggestion: This dish can be served with lime wedges to add a touch of acidity, balancing the rich flavors of the curry.

Possible variations: You can experiment with different types of vegetables, such as carrots or zucchini, or you can replace the chicken and shrimp with tofu for a delicious vegetarian option.

This Singapore noodles recipe is perfect for a quick weeknight dinner or to impress guests. With its vibrant flavors and varied textures, it will surely become a favorite in your kitchen!
