Ingredients for crepes:
- 1 cup of wheat flour
- 2 eggs
- 1 cup of water
- 1/2 teaspoon of salt
- 1 tablespoon of oil (for the batter)
Ingredients for filling:
- 300 g chicken breast, diced
- 3-4 tablespoons sunflower oil
- 1 medium onion, finely chopped
- 1 bell pepper (preferably red or yellow), diced
- 100 g mushrooms, sliced (optional)
- 2-3 cloves of garlic, finely chopped
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Fresh herbs (cilantro or parsley) for garnish
Preparing the crepes
1. In a large bowl, combine the flour, eggs, water, salt, and oil. Whisk the ingredients well until you obtain a smooth batter without lumps. If it is too thick, you can add a few tablespoons of water to thin it out.
2. Heat a non-stick pan over medium heat. Add a little oil and, once hot, pour a portion of the crepe batter (about 1/4 cup). Spread it evenly over the bottom of the pan. Cook for 1-2 minutes until the edges turn golden and the batter is firm.
3. Flip the crepe to the other side and cook for another 1-2 minutes. Repeat the process with the remaining batter until you have made all the crepes. Place them on a plate and cover with a clean towel to keep warm.
Preparing the filling
1. In a large pan, heat the 3-4 tablespoons of sunflower oil. Add the diced chicken breast and sauté over medium heat, stirring occasionally, until golden and well cooked.
2. Add the finely chopped onion and garlic. Cook for 2-3 minutes until the onion becomes translucent. If you choose to add mushrooms, now is the time to put them in the pan.
3. Add the diced bell pepper, soy sauce, salt, and pepper to taste. Mix well and let the mixture simmer for 3-4 minutes until the vegetables are tender but still crisp.
Assembling the crepes
1. Take a crepe and add a portion of the chicken filling on one side. Fold it in half, then again in half, forming a triangle. Repeat with the other crepes.
2. Optionally, you can lightly brown them in a pan for a crispy crust. This will provide a pleasant textural contrast.
3. Serve the crepes warm, garnished with fresh herbs. You can also add soy sauce or spicy sauce on the side for an extra flavor boost.

In a medium-sized pot, we put 3-4 tablespoons of oil (sunflower oil) and start to sauté the chicken breast a bit. After turning it on all sides, we add grated carrot, peas (I also added a bit of eggplant). We let it cook for about 2-3 minutes and then add chopped cabbage. We let it simmer on low heat for about 5 minutes (the pot covered with a lid), then we season with salt, pepper, soy sauce... and let it simmer for another 5 minutes until the cabbage softens well! Finally, we add the bean sprouts. Dough (for the pancakes): Mix all the ingredients; it should result in a thin pancake batter. From this, we cook sheets in a pan just like pancakes. ASSEMBLY: For this operation, we need a bit of flour mixed with water to use as glue! We start by greasing the edges of the sheets with our glue. We put the filling in the middle and fold. They are ready to be fried. From the given quantities, I got 14 pieces! They are served hot, but they are also tasty when cold. They can be accompanied by a sauce based on mayonnaise or yogurt.
