Ingredients

For the base:
- 6 eggs (choose fresh, quality eggs)
- 150 g sugar (preferably granulated sugar)
- 1 packet of vanilla sugar (for a sweet aroma)
- 200 g flour (look for flour with a medium protein content)
- 1 teaspoon baking powder
- 100 g ground almonds (make sure they are fresh for a more intense flavor)
- 100 g dark chocolate (opt for chocolate with over 70% cocoa)

For the cream:
- 300 ml liquid cream (ideally well chilled)
- 200 g cream cheese (you can use mascarpone for a creamier texture)
- 3-4 tablespoons apricot jam (or any preferred jam)

For the syrup:
- 200 ml water
- 3 packets of hot chocolate (for an intense chocolate flavor)
- 150 g sugar

For the chocolate glaze:
- 50 g dark chocolate
- 50 g milk chocolate
- 25 g butter
- 50 ml liquid cream

For decoration:
- 6 tablespoons sugar (for the "fairy hair")
- Chocolate-covered peanuts and raisins
- Hazelnuts
- 4 quarters of waffles (optional for extra texture)

Prepare for a culinary masterpiece!

1. Preheat the oven: Start by preheating the oven to 190°C. It's essential that the temperature is correct to achieve a fluffy base.

2. Prepare the pan: Grease a round pan with oil and flour. It's important to cover all edges well to prevent the bases from sticking. I used a bundt pan, but you can choose any shape you prefer.

3. Prepare the bases:
- Beat the egg whites: In a large bowl, add a pinch of salt to the egg whites and beat until frothy. Gradually add the sugar and continue mixing until the mixture becomes glossy and holds onto the beaters.
- Incorporate the yolks: Add the yolks one by one, mixing well after each.
- Add the melted chocolate: The chocolate should be melted in a double boiler before being incorporated into the mixture (make sure it cools slightly before adding it to the eggs).
- Incorporate the dry ingredients: Mix the flour, baking powder, and ground almonds in a separate bowl. Gradually add them, using a spatula and gently folding in from top to bottom to keep the air in the egg whites.

4. Bake the base: Pour the mixture into the prepared pan and bake for 30-35 minutes or until the base passes the toothpick test. When ready, let it cool in the pan for 5 minutes, then turn it out onto a rack to cool completely.

5. Prepare the cream:
- Whip the liquid cream until it becomes firm. Add the cream cheese and apricot jam, mixing well. If you don’t want jam in the cream, you can use a few tablespoons of powdered sugar.

6. Prepare the syrup:
- In a saucepan, add the water and sugar and boil over medium heat, stirring until dissolved. Add the packets of hot chocolate and let it cool.

7. Prepare the glaze:
- Melt the dark chocolate, milk chocolate, butter, and liquid cream over a double boiler. Let the glaze cool for 5 minutes before using, ensuring it doesn’t harden.

8. Assembly:
- Cut the base into three layers. Soak each layer with the chocolate syrup, fill with cream, and add the remaining cream on top of the last layer. Place the waffle pieces on top and pour the glaze over, allowing it to drip beautifully.
- For decoration, caramelize the sugar for the "fairy hair" and use a teaspoon to create thin strands around the cake. The remaining caramel can be poured onto a wooden surface and broken into pieces for a spectacular effect.

If you can’t find ground almonds, you can use almond flour or even ground walnuts. Also, for a touch of freshness, you can add a few drops of orange essence to the cream.
