Cherry compote is a simple and quick recipe that will bring the flavor of summer even on cold winter days. This delicious dessert can be enjoyed on its own, with yogurt, or as an ingredient in various dishes. Here’s how to prepare it step by step.

Necessary ingredients:
- 1 kg fresh cherries
- 1 cup of water (or red wine for a more intense flavor)
- 150 g sugar
- 1 packet of vanilla sugar
- A pinch of salt

Step 1: Preparing the cherries
Start by washing the cherries under a stream of cold water. Make sure to clean them thoroughly of impurities. If you wish, you can remove the pits, but this step is optional. Cherries with pits will add a deeper flavor to the compote.

Step 2: Preparing the syrup
In a pot, add the water (or red wine) along with the sugar, vanilla sugar, and a pinch of salt. Place the pot over medium heat and stir until the sugar is completely dissolved. Once the mixture starts to boil, reduce the heat and let it simmer for a few minutes until the syrup thickens slightly. This syrup will be the flavorful base for your compote.

Step 3: Assembling the jars
Prepare the 800 ml jars. Make sure they are clean and dry. A good idea is to sterilize them in the oven for 15-20 minutes at a temperature of 100°C to prevent contamination. Fill each jar halfway with cherries, then add 3 heaping tablespoons of sugar. Top with the hot syrup, leaving about 2 cm of space to the lid.

Step 4: Boiling the jars
In a large pot, place the filled jars and add water until they are almost completely covered. Put the pot on the heat, and once the water starts to boil, reduce the temperature to maintain a gentle boil. Let the jars boil for 30 minutes, starting from the moment the water boils. This process will help preserve the compote and develop the flavors.

Step 5: Second round of boiling
After 30 minutes, turn off the heat and let the jars cool in the water. The next day, repeat the boiling process for another 30 minutes. This water bath preservation method is essential to ensure a longer shelf life for your compote.

Step 6: Cooling and storing
After finishing the second boiling, let the jars cool completely in the water they boiled in. Once cooled, wipe them with a clean cloth and store them in a dry, cool place, preferably in a cabinet away from light.

Serving suggestions and variations
Cherry compote can be enjoyed plain or alongside Greek yogurt, ice cream, or as a filling for pancakes. For a unique touch, you can add a few fresh mint leaves or slices of lemon to the cherry syrup for an extra freshness boost.
