The dough is the essence of a successful dish, and in our case, we will create a cheese-based delight that will delight all the senses. We start by preparing the dough, which should be a little softer and stickier than bread dough. In a large bowl, add a fresh egg, lukewarm water, sour cream, and sifted flour along with salt. It is important that all ingredients are at room temperature to achieve a uniform consistency. Knead the dough until it becomes elastic and homogeneous, then let it rest for 15 minutes at room temperature. This resting stage is essential to allow the gluten to relax.

After the dough has rested, divide it into three equal parts. Take each portion and roll it out into a rectangular sheet, being careful not to make it too thin. Spread each sheet with one-third of the soft butter, ensuring it is evenly distributed. Then, roll each sheet into a log, wrap them in plastic wrap, and place them in the refrigerator for at least 30 minutes. This chilling time will help the dough become easier to handle.

During this time, prepare the delicious filling. In a bowl, mix the cottage cheese well with sugar, one egg, vanilla sugar, and raisins. Homogenize the ingredients until you obtain a creamy and fragrant composition. This filling will add a sweet and savory taste to our dish.

After the dough has cooled, take one log and cut it into 10-12 equal pieces. Then, roll each piece into a round sheet about 6-8 cm in diameter. In the middle of each sheet, place 1-2 teaspoons of the cheese filling. Bringing the edges towards the center, seal them well to prevent the filling from leaking during baking. Place them on a baking tray lined with parchment paper, with the sealed side down, or, if you prefer, you can wrap them nicely.

Before putting them in the oven, brush them with sour cream to give them a golden and delicious crust. Preheat the oven to 200 degrees Celsius and bake them until they start to brown, then reduce the temperature to 150 degrees and let them bake for another 10 minutes. When they are ready, remove them from the tray and place them on a rack, covering them immediately with a towel to soften them and make them fluffy.

These delicious treats can be served warm, but they are just as tasty when cold, making them perfect for any occasion. Enjoy them with your loved ones and savor the authentic taste!
