Mushroom Soup for Lent
To prepare a delicious vegetable soup, we start by cleaning all the necessary vegetables. It is essential to choose fresh vegetables that will provide a perfect taste to the dish. Therefore, we take carrots, onion, bell pepper, and of course, mushrooms. We cut the carrots into small cubes or slices, finely chop the onion, and slice the bell pepper into thin strips.
In a large pot, we heat a little oil. When the oil is ready, we add the carrots, onion, and bell pepper, sautéing them over medium heat. It is important to stir constantly to prevent them from sticking to the bottom of the pot and to allow the vegetables to release their flavors. After the vegetables become slightly translucent, we add the diced tomatoes. These will not only add a fresh taste but also a vibrant color to our soup.
Once the tomatoes start to break down, we can add the finely chopped parsley. This will give a special aroma and enhance the flavors. The next step is to fill the pot with enough water to cover all the ingredients. We bring the soup to a boil, then add the sliced mushrooms. The mushrooms will add a pleasant texture and umami flavor that will enrich the soup.
We let everything simmer on low heat, being careful to stir occasionally. During the cooking process, it is time to adjust the taste of the soup with salt, pepper, and a pinch of vegetable seasoning, to taste. When all the vegetables are cooked and have become tender, we add the crushed garlic, which will enhance the flavor. For those who love a slightly sour soup, a bit of broth can be added, which will intensify the aroma and add a touch of acidity.
After adding the garlic and broth, we let the soup come to a final boil, allowing all the flavors to blend perfectly. Finally, we serve the hot soup, sprinkled with chopped green parsley on top for a colorful and fresh appearance.
