I will guide you step by step to achieve a juicy and flavorful turkey, perfect for enjoying with loved ones.
### Ingredients
For the marinade:
- 1 turkey (2-3 kg)
- 150 ml white wine
- 150 ml oil
- 150 ml water
- Salt (preferably sea salt)
- Pepper (ground and whole)
- Cloves (2-3 whole)
- Bay leaves (2-3 leaves)
- A pinch of paprika (optional)
- Fresh or dried herbs: sage and parsley
For the stuffing:
- 150 g lean pork meat
- 100 g pork liver
- 1 large onion
- 1 piece of celery (about 100 g)
- 2 tablespoons of winter vegetables (optional)
- 1 egg
- 2 tablespoons of breadcrumbs
- 2 tablespoons of oil
- Aromatic herbs (to taste: thyme, dill, or parsley)
### Instructions
1. Prepare the marinade: In a large container, combine white wine, oil, water, salt, pepper, cloves, bay leaves, paprika, and aromatic herbs. Mix well until the salt is completely dissolved.
2. Marinate the turkey: Rub the turkey inside and out with salt, then submerge it in the marinade. Let it marinate in the refrigerator for 24 hours. It is essential to turn the turkey every few hours to ensure it absorbs the flavors evenly.
3. Prepare the stuffing: In a pan, sauté the chopped onion in 2 tablespoons of oil until it becomes translucent. Add the grated celery and continue to sauté for a few minutes. In a food processor, combine the sautéed onion, pork meat, pork liver, winter vegetables, egg, breadcrumbs, and aromatic herbs. Season with salt and pepper to taste, then mix until you obtain a homogeneous mixture.
4. Stuff the turkey: Preheat the oven to 200 degrees Celsius. Fill the turkey with the meat mixture, being careful not to overstuff it, as the stuffing will expand during baking. Place the turkey in a large roasting pan.
5. Bake: Pour the marinade over the turkey that it was marinated in. After 15 minutes of baking, reduce the oven temperature to 180 degrees Celsius. Bake the turkey for 2.5 hours, basting it every 15-20 minutes with oil from the pan to prevent drying out.
6. Check for doneness: Use a kitchen thermometer to check the internal temperature of the turkey, which should reach 75 degrees Celsius. In the end, the turkey should be browned, with crispy and juicy skin.
### Serving and Variations
After removing the turkey from the oven, let it rest for 15-20 minutes before carving. Serve it alongside grilled vegetable sides or mashed potatoes, along with the sauce made from the roasting juices.
For a unique twist, try adding nuts or dried fruits such as apricots or cranberries to the stuffing for a sweet and tangy note.
This oven-roasted stuffed turkey will surely become the star of your holiday meal, bringing unforgettable moments to family and friends. So, experiment and enjoy every step of this process!
Ingredients: I had a turkey smaller than 2.5 kilograms and from my own experience, I recommend that turkeys weighing 2-3 kg are large enough for 6-8 people and turn out more tender. For the marinade: 24 hours in a mixture made from 150 ml white wine, 150 ml oil, 150 ml water, salt, pepper (both ground and whole), cloves, bay leaves, a little paprika, and aromatic herbs like sage and parsley. Filling: lean pork (150 grams), with pork liver (100 grams), one large onion, a piece of celery, 2 tablespoons of winter vegetable made according to this recipe, one egg, 2 tablespoons of breadcrumbs, 2 tablespoons of oil, and aromatic herbs according to preference.
