To prepare these delicious cheese croissants, we start by dissolving the yeast in a little warm water. We add the sugar and let the mixture sit for about 5 minutes, or until the yeast doubles in volume, a sign that it is active and ready to help us achieve a fluffy dough.

In a large bowl, we put the flour and make a well in the middle. Here, we add the oil, salt, the rest of the warm water, and the risen yeast. It is important to knead the dough patiently until we achieve an elastic and homogeneous texture. This process can take between 8 and 10 minutes, but the result will be worth every effort. Once the dough is well kneaded, we let it rest in a warm place, covered with a clean cloth, for about 30 minutes, during which it will rise and become fluffier.

Meanwhile, we can prepare the filling. We mix the cheese with the sour cream in a bowl, using a spatula or a fork, until the mixture becomes smooth and creamy. This filling will give the croissants a savory taste and a pleasant texture.

After the dough has risen, we roll it out into a thin sheet, about 5 mm thick. Using a knife or a dough cutter, we cut the dough into squares with sides of about 10 cm. On each square, we place a teaspoon of the cheese filling, then we fold the two side corners over the top, creating a triangular shape, and gently roll it to form the croissant.

After shaping all the croissants, we let them rise again for 10-15 minutes, covered, to become even fluffier. In the meantime, we preheat the oven to a low temperature, around 180 degrees Celsius. We brush each croissant with beaten egg to achieve a golden and appetizing crust. On top, we can sprinkle grated cheese, poppy seeds, or sesame seeds, depending on our preferences.

When the oven is well heated, we place the croissants on a baking tray lined with parchment paper and put them in the oven. We let the croissants bake until they become nicely browned, for about 20-25 minutes. Once they are ready, we carefully take them out and let them cool slightly. These croissants can be served plain, warm, or alongside a cup of milk, being a perfect choice for breakfast or a delicious snack. A combination of textures and flavors that will delight any foodie!
