Roulades are known for their versatility, being able to be filled with jams, creams, or fresh fruits, and Cake ALEX combines all these elements into an explosion of flavors and colors. It is perfect for birthdays, holidays, or simply for a family meal.

For the roulades (4 roulades):
- 12 eggs
- 15 tablespoons sugar
- 12 tablespoons water
- 12 tablespoons flour
- 1 teaspoon baking powder
For filling and decoration:
- ½ liter whipped cream (ideally from Milli)
- 1 jar strawberry jam
- 1 jar apricot jam
- 250 g colored Turkish delight
- 100 g raisins (ideally soaked in rum)
- 1 package vanilla cream Dr. Oetker
- 400 ml milk
- 2 bananas
- 3 kiwis
- 4 clementines
- 200 g walnuts (roasted)
- 200 g peanut butter
- Gum paste mix for roses
- Natural blue food coloring
Step by Step: Preparing Cake ALEX
Step 1: Preparing the Roulades
1. Preheat the oven to 185°C. Prepare a baking tray by lining it with parchment paper and greasing it with a little butter.
2. In a large bowl, separate the egg yolks from the egg whites. Beat the yolks with 15 tablespoons of sugar until they double in volume and become a creamy mixture.
3. Gradually add the 12 tablespoons of water, flour, and baking powder, mixing carefully to avoid lumps.
4. Beat the egg whites until stiff peaks form, then gently fold them into the yolk mixture using a spatula to retain air in the mixture.
Step 2: Baking the Roulades
5. Divide the mixture into four equal portions and pour each portion into the prepared tray. Bake the roulades in the preheated oven for about 10-12 minutes or until golden and elastic to the touch.
6. Once the roulades are ready, remove them from the oven and while they are still hot, roll each roulade in the parchment paper and then in a clean towel. Let them cool completely.
Step 3: Filling the Roulades
7. Once the roulades have cooled, carefully unroll them. Two of them are spread with strawberry jam, and the other two with apricot jam. Roll them up again and place them in the refrigerator until use.
Step 4: Preparing the Cream
8. In a saucepan, prepare the vanilla cream according to the instructions on the package, using 400 ml of milk. Let the cream cool slightly.
9. In a bowl, mix the vanilla cream with 200 g of peanut butter. Add diced Turkish delight (dust it with powdered sugar for a nicer appearance), broken roasted walnuts, and rum-soaked raisins. Mix well to combine the ingredients.
Step 5: Assembling the Cake
10. Line the sides of a pot with aluminum foil. Place a layer of roulade slices at the bottom of the pot.
11. Add half of the prepared cream, then layer the banana, kiwi, and clementine slices over the cream.
12. Add another layer of roulades, followed by the remaining cream and finish with a final layer of roulades.
13. Cover the cake with the ends of the aluminum foil, place a plate on top, and add a weight to gently press it. Leave the cake in the refrigerator for 4-5 hours or overnight.
Step 6: Decorating the Cake
14. Before serving, whip the cream and add 3 drops of natural blue food coloring, mixing gently until you achieve a uniform color.
15. Decorate the cake as desired with the colored whipped cream. You can create roses from gum paste by adding a few drops of blue food coloring for a special touch.
