Step-by-step instructions

Step 1: Preparing the base
1. Preparing the tray: Start by preheating the oven to 160°C. Line a 20 cm tray with baking paper.
2. Beating the egg whites: In a clean bowl, beat the egg whites with a pinch of salt until frothy. Gradually add the brown sugar and continue beating until you achieve a glossy meringue.
3. Mixing the dry ingredients: In another bowl, combine the flour, baking powder, salt, ground nuts, and cocoa.
4. Combining the ingredients: Melt the butter and gently add it to the egg white meringue. Use a spatula to fold in the dry ingredients in three stages, being careful not to deflate the mixture.
5. Baking: Pour the mixture into the tray and bake for 20-25 minutes. Check with a toothpick; if it comes out clean, the base is ready. Let it cool completely in the tray.

Step 2: Preparing the creams
1. Dark chocolate cream: In a double-bottomed saucepan, heat the liquid cream. When it starts to boil, add the chopped dark chocolate. Stir until the chocolate is completely melted. Separately, mix the gelatin with the two tablespoons of water and let it sit for 5 minutes. Add the gelatin to the chocolate cream and mix well. Let it cool slightly, then fold in the whipped cream.

2. Milk chocolate cream: Repeat the same steps as for the dark chocolate cream, using milk chocolate.

3. White chocolate cream: Follow the same procedure, but with white chocolate.

Step 3: Assembling the cake
1. Preparing the syrup: Boil the water together with the sugar until completely dissolved. Add the rum essence and let it cool.

2. Assembling the cake: Place the cooled base on a serving platter. Soak it evenly with the syrup.

3. Adding the creams: Place a removable ring around the base. Pour the first dark chocolate cream and refrigerate the cake for 20 minutes to set. Then add the milk chocolate cream, followed by the white chocolate cream. Leave the cake in the fridge for at least 3 hours to set well.

Step 4: Decorating
1. Finishing: After cooling, remove the removable ring. Grate a piece of chocolate on top of the cake for an elegant look. You can also add fresh fruits or mint leaves for a touch of freshness.

Tips and tricks
- Choose quality chocolate: The taste of the cake largely depends on the quality of the chocolate used. Opt for chocolate with a high cocoa content for a more intense flavor.
- Gelatin: Make sure the gelatin is well dissolved to avoid lumps in the creams.
- Gluten-free option: You can replace regular flour with almond flour for a gluten-free cake.
- Pairing with drinks: This cake pairs wonderfully with a sweet wine or a chocolate-based cappuccino.

Calories and nutritional benefits
This cake is a calorie-rich dessert, with approximately 400 calories per serving, but it is a good source of antioxidants due to the chocolate. Additionally, the nut content brings healthy fats and proteins.
