This process takes between 5 and 6 hours, so it's good to plan ahead. After the required time has passed, we drain the buckwheat and rinse it lightly under a stream of cold water. The hydrated buckwheat will become softer and easier to integrate into the mixture, providing a pleasant taste and texture.
Next, we take care of the seeds and dates. With the help of a food processor, we chop our favorite seeds, whether they are nuts, almonds, or pumpkin seeds. We add the dates, which bring natural sweetness and a sticky texture, perfect for binding the ingredients together. Once we have a smooth paste, in a large bowl, we combine the hydrated buckwheat with the mixture of seeds and dates. Here, we add a pinch of salt to enhance the flavors and honey, which will enrich the sweet taste of the candies.
An important step is to add the coconut, which contributes to the consistency of the mixture. It is essential to add the coconut gradually, stirring constantly, until we obtain a mixture that can be easily shaped with our hands. The final consistency should be sticky but firm enough to form balls.
After we have the desired mixture, it’s time to play a little with colors. We divide the mixture into two equal parts. One half we leave natural, white, while the other half we color with carob powder, which will add not only a pleasant shade but also a slightly sweet and unique taste.
We shape each portion into small balls that can be rolled between our palms. We arrange them on a tray covered with parchment paper, being careful to leave a little space between them. If we have any candies left, we can keep them in the fridge, where they will last a few days, being a healthy and delicious snack anytime.
