1. Preparing the meat: Begin by washing the beef under cold running water to remove impurities. Then, cut it into cubes of about 2-3 cm. This will help the meat cook evenly.

2. Boiling the meat: In a large pot, add the meat cubes and cover them with cold water. Add a teaspoon of salt and place the pot over medium heat. As the water begins to boil, foam will form on the surface; this should be removed with a skimmer. Tip: If you want a more intense flavor, add a few beef bones (which will be removed later) to enrich the broth.

3. Adding the vegetables: Once the meat is almost cooked (about 60 minutes), add the harder vegetables: grated carrots, parsnip, celery, and onion. Let them boil together for 10-15 minutes. Then, add the potatoes, green bell pepper, green beans, and peas. These vegetables cook relatively quickly, so make sure to add them at the right time!

4. Seasoning: During the boiling process, add 3 tablespoons of tomato paste and mix well. This will give a nice color and pleasant taste. Also, add lemon salt and Delikat seasoning to taste.

5. Finishing the soup: When the vegetables are almost cooked (about 10-15 minutes), add the noodles. Boil for 5-7 minutes or until the noodles are cooked.

6. Adding the eggs: A few minutes before turning off the heat, beat the two eggs in a small bowl. Take a cup of hot soup and gradually add the beaten eggs, stirring continuously to avoid lumps. Then, pour the mixture into the pot, stirring well. This step will give the soup a creamy texture and an appetizing appearance.

7. Serving: The soup is ready! You can serve it hot, sprinkled with freshly chopped lovage on top. The flavors will blend wonderfully, and those who taste it will be delighted.

Helpful tips

- Vegetable variations: You can experiment with seasonal or frozen vegetables, depending on your preferences. For example, carrots can be replaced with zucchini, and parsnip with celery or sweet potatoes.
- Different flavors: If you want to give the soup a tangy note, add a bit of borscht in the last 5 minutes of boiling for an authentic taste.
- Serving suggestions: Beef soup pairs wonderfully with a slice of fresh bread, rice, or polenta for a complete and comforting meal.
