Braciole are a classic Italian dish, full of flavor, combining juicy beef with a rich and aromatic tomato sauce. This recipe is simple yet impressive, perfect for a family meal or a special occasion. Here’s how to achieve a perfect result!
Ingredients:
- 700 g beef shoulder, cut into 4 slices about 0.8 cm thick
- 4 slices of prosciutto
- 2 tablespoons pine nuts
- 2 tablespoons grated Pecorino Romano
- 2 garlic cloves, grated
- 2 tablespoons chopped parsley
- 100 ml olive oil
- 1 large can of tomatoes (about 400 g)
- 50 g tomato paste
- 2 bay leaves
- 3 fresh basil leaves, torn into small pieces
- 1 medium onion, finely chopped
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 250 ml red wine
- Flour (for dusting)
- Salt and pepper, to taste
Instructions:
1. Preparing the meat:
Start by pounding each slice of beef shoulder with a meat mallet until it reaches a thickness of about 0.5 cm. This step is essential for achieving tender and easy-to-roll meat. After pounding, sprinkle salt and pepper on both sides to season well.
2. The filling:
In a blender, add the pine nuts, prosciutto, Pecorino Romano, grated garlic, and chopped parsley. Blend until you get a smooth paste. This filling will add a unique flavor to your braciole.
3. Fill and roll:
On each slice of meat, place a portion of the filling obtained, then roll the meat tightly and secure it with a toothpick or tie it with kitchen twine to keep the filling inside.
4. Preparing the sauce:
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion, carrots, and celery, and sauté for 5-7 minutes until the vegetables become soft. Add the red wine and let it boil until the alcohol evaporates. Add the can of tomatoes, tomato paste, bay leaves, and basil, mixing well. Let the sauce simmer on low heat for 15 minutes.
5. Cooking the braciole:
In the same skillet, add the stuffed braciole and cover them with sauce. Let them simmer on low heat for 30-40 minutes, turning occasionally, until the meat is tender and well-cooked.
6. Serving:
Serve the braciole warm, covered with the tomato sauce. You can accompany this dish with fresh pasta, rice, or a green salad. A personal suggestion would be to add grated Parmesan on top for extra flavor.
Practical tips:
- Make sure to use quality beef, preferably with a moderate fat content to achieve a juicy dish.
- If you don’t have pine nuts, you can use ground almonds or walnuts as an alternative.
- For a lighter version, you can omit the prosciutto and add extra vegetables to the filling, such as peppers or mushrooms.
