In a generous bowl, I started by carefully homogenizing the flour, bran, and salt, making sure the ingredients were well combined. This step is essential for achieving a uniform texture of the dough. After obtaining a homogeneous mixture, I made a hole in the middle of the mixture, like a small volcano, where I began to gradually pour in the water. It is important to add the water little by little, continuously mixing with a spatula or with my hands, to prevent lumps from forming.

During the mixing process, I started adding my favorite seeds: sunflower seeds, sesame, or even flax, which not only add a delicious taste but also a crunchy texture. I kneaded the dough patiently until I achieved the right consistency, neither too soft nor too hard, ideal for rolling out. After the dough was well kneaded, I placed it on a surface sprinkled with flour and rolled it out with a rolling pin into a thin sheet, making sure it was even.

After obtaining the sheet, I cut it out with a cookie cutter, creating cute and appetizing shapes. I chose to 'groom' them a bit with the help of a fork, to give them a more interesting look and allow them to bake evenly. Then, I carefully placed the cookies on a baking tray lined with parchment paper, ensuring they had enough space between them to expand during baking.

Once the tray was prepared, I placed it in the preheated oven on the lowest heat, keeping the door slightly ajar to allow steam to escape. Baking took about an hour and a half, during which the pleasant aroma of the cookies spread throughout the kitchen, making me realize how delicious they would be.

After the cookies were ready, I decided to give them a touch of refinement by brushing them with a little olive oil. This not only gives them an appetizing shine but also contributes to their flakiness and final taste. I covered the cookies with a kitchen towel, letting them soften, to achieve a soft and pleasant texture when chewed. Thus, I made a healthy and delicious snack, perfect to be enjoyed alongside a cup of tea or coffee.
