Creamy Cake with Ness and Poppy
To prepare this delicious cake, we will start with the preparation of the layer, which constitutes the perfect base of our dessert. The egg whites are separated from the yolks, and the egg whites are beaten with a pinch of salt. It is important to use a quality mixer to achieve a light and consistent foam. Once the egg whites have started to become firm, gradually add the sugar, continuing to mix until it is completely dissolved and the mixture becomes shiny and firm. Once the sugar is incorporated, add one yolk at a time, gently mixing with a spatula, using upward motions to avoid losing air from the egg whites.
After homogenizing the yolks, you will add the flour, sifting it gradually to avoid lumps. Once the flour is completely incorporated, pour in the water, mixing gently until you obtain a homogeneous mixture. This dough is transferred to a baking tray (ideally 38x26 cm) lined with parchment paper. Place the tray in the preheated oven at a medium temperature and bake until it passes the toothpick test, which indicates that it is well baked. Once the layer is ready, remove it from the oven and let it cool on a rack.
Meanwhile, we take care of the sponge. Just like with the layer, start by beating the egg whites with a pinch of salt. When they start to foam, gradually add the sugar, continuing to mix until it is completely dissolved. Then, sift the flour mixed with the baking powder and, very importantly, gently mix with the spatula, from the bottom up, to maintain the air in the mixture. Once the flour is incorporated, add the poppy seeds, which will give a special flavor to your sponges.
The sponge mixture is transferred to the same tray, lined with parchment paper, and baked in the preheated oven, making sure to pass the toothpick test again. Once the sponge is baked, let it cool completely.
In parallel, we prepare the delicious cream. The yolks are mixed with the sugar until they become creamy and light in color. Then, add the coffee, followed by the milk. Once the mixture is well homogenized, transfer it to a bain-marie, where it will be constantly stirred to avoid lumps. Cook until it thickens like a pudding, then remove from the bain-marie and let it cool. Once the cream has cooled completely, incorporate the margarine, mixing well.
The cake assembly is done as follows: on the cooled sponge, spread half of the prepared cream, followed by the layer, and then top with the remaining cream. Finally, dust with coffee using a sieve to achieve an even layer. This cake will surely become a favorite, thanks to its delicate texture and intense flavors!
