- 1 egg yolk for brushing
- 150 g of melted butter for brushing the pastry sheets
- a little oil for sautéing
- 2 tablespoons of tomato paste
- salt and pepper, to taste

Preparing the filling:
1. Start by sautéing the onion: In a heated skillet, add a little oil and sauté the finely chopped onion over medium heat until it becomes translucent and soft.
2. Add the mushrooms: Wash the mushrooms and cut them into small pieces or slices. Add them to the onion and continue sautéing, stirring frequently. You will notice that the mushrooms will release water; continue cooking until all the water evaporates.
3. Season: Add salt, pepper, and tomato paste, mixing well. Turn off the heat and let the filling cool slightly. Once cooled, incorporate 2/3 of the grated cheese into the mushroom mixture.

7. Fill and wrap: In the corner of each strip, add a generous spoonful of the mushroom filling. Fold the left corner over the filling, then fold the right corner. Continue wrapping the triangle until you reach the end of the strip, making sure to seal all sides well to prevent the filling from leaking.

8. Place the triangles: Arrange the triangles on a baking tray lined with parchment paper. Make sure they are spaced apart to allow for even baking.
9. Brushing and sprinkling: In a small bowl, mix the egg yolk with a little milk and brush each triangle with this mixture. Sprinkle the remaining grated cheese on top of each triangle.
