To prepare these delicious mint cookies, we start by ensuring that all ingredients are at room temperature and our utensils are ready. In a large bowl, we cream the soft margarine together with the sugar, using a mixer or spatula, until the mixture becomes a smooth and fluffy cream. This will be our base, and the fine texture will contribute to the fluffiness of the cookies.

Once we have a consistent cream, we add the egg, vanilla essence, and continue mixing, ensuring that all ingredients combine perfectly. The vanilla aroma will add a touch of elegance to the cookies, complementing the mint flavor excellently.

In another bowl, we carefully sift the flour and baking powder to ensure there are no lumps in the mixture. This is an important step, as the air introduced into the flour will help achieve a fluffier texture. After mixing the two dry ingredients well, we gradually add them to the margarine mixture. It is recommended to do this in portions, gently mixing with a spatula to avoid losing air from the mixture.
