Plus, it's an easy-to-make recipe, ideal for any occasion.
Preparation time: 20 minutes
Baking time: 40 minutes
Total time: 60 minutes
Servings: 8
Ingredients:
For the crust:
- 250 g regular biscuits (preferably digestive or petit beurre)
- 100 g unsalted butter, melted
- 1 egg
- 2-3 tablespoons of milk
For the cream:
- 250 g mascarpone
- 300 g sweet cow cheese (ideally well-drained)
- 4 eggs
- 7 tablespoons of sugar (you can adjust to taste)
- 1 packet of vanilla sugar
- 1 jar of blueberry jam (about 300 g)
Instructions:
1. Preparing the base:
Start by crushing the biscuits in a food processor or in a bowl using a rolling pin. The biscuits should become a fine mixture, similar to breadcrumbs. Add the melted butter and mix well until the mixture is moist. This mixture will form the delicious base of the cheesecake.
2. Forming the base:
Prepare a detachable cake pan (22-24 cm in diameter) and grease it with a little butter or line it with baking paper. Pour the biscuit mixture into the pan and press it down well with the bottom of a glass or a spatula, making sure there are no gaps. This will be the perfect foundation for your cheesecake.
3. Preparing the cream:
In a bowl, beat the egg whites with 4 tablespoons of sugar until they form a firm foam. This step is essential for obtaining an airy cream. Separately, mix the egg yolks with the other 3 tablespoons of sugar and the vanilla sugar until you get a homogeneous mixture. Add the mascarpone and well-drained cow cheese, mixing with a spatula.
4. Combining the ingredients:
Carefully fold the beaten egg whites into the cheese mixture using a spatula and mixing from the bottom up, so as not to lose the air from the foam. This will make the cheesecake light and fluffy.
5. Baking:
Preheat the oven to 180°C. Pour the cheese cream over the biscuit base in the pan and level the surface with a spatula. Bake the cheesecake for about 40 minutes or until the surface becomes golden and creamy.
6. Cooling:
Once the cheesecake is ready, let it cool at room temperature, then place it in the refrigerator for a few hours, ideally overnight. This step is crucial to allow the flavors to develop and to achieve a perfect texture.
7. Serving:
Before serving, remove the cheesecake from the mold and spread it with blueberry jam. You can also add some fresh blueberries for a more appealing look. Serve it alongside a cup of coffee or cappuccino, and your dessert will be truly special.
Variation suggestions:
For a citrus-flavored cheesecake, you can add lemon or orange zest to the cheese cream. You can also experiment with other types of jam, such as raspberry or strawberry, to achieve a unique combination.
This blueberry jam cheesecake recipe is not only simple but also delicious, making it perfect for parties or to treat yourself at a family meal. Bon appétit!
