Step 1: Preparing the sponge layers
1. Preparing the egg whites: In a large bowl, use a mixer to beat the egg whites with a pinch of salt until foamy. Gradually add the sugar, continuing to mix until you achieve a firm and glossy foam.
2. Adding the egg yolks: Incorporate the egg yolks one at a time, gently mixing after each addition. This step is essential to maintain the airiness of the mixture.
