To make a delicious and airy cake, we start by preparing the sponge cake base, an essential step that should be done a day in advance to achieve the best results. First, we will separate the eggs. It is important to ensure that the bowl in which we will beat the egg whites is clean and dry, as any trace of fat can prevent the egg whites from whipping properly. So, we carefully separate the egg whites from the yolks.

We begin to mix the egg whites with a pinch of salt until they become stiff peaks that hold their shape. This step is crucial for achieving a fluffy sponge cake. Gradually, we add a tablespoon of sugar at a time, continuing to mix so that the sugar dissolves completely. Finally, we add the vanilla sugar, which will give a pleasant aroma to the entire mixture.

After we have incorporated the sugar, it is time to add the yolks, one at a time, mixing on low speed so as not to lose the air in the mixture. We continue with the flour, which we add gradually, using a wooden spoon to gently fold it in, mixing from the bottom up, from the center outwards. This technique will ensure a light and fluffy texture for the base.

We must not forget to add the baking powder mixed with lemon juice, which will help the sponge cake rise. Once the mixture is homogeneous, we pour the batter into a baking tray lined with parchment paper, leveling the surface gently without pressing too hard. The tray is placed in a preheated oven at medium heat for 25-30 minutes. When the base is ready, we turn off the oven and let it cool completely in the tray to avoid cracking.

The next day, we can start assembling the cake. We cut the base into two equal parts, and each layer will be soaked with a syrup made from water, sugar, and vanilla essence, which will add moisture and flavor. On the first layer, we spread the vanilla cream, followed by chocolate flakes, and on the second layer, we apply the chocolate cream.

Finally, we whip the cream until it becomes firm and airy, then we decorate the cake with it, creating an attractive and delicious appearance. The decoration can be completed with grated chocolate or fresh fruits, according to preference. The cake is now ready to be enjoyed, being a perfect choice for any special occasion!
