To prepare a delicious Zuppa Inglese, we start by preparing the cream. In a large bowl, we put the egg yolks together with the sugar. We mix well with a whisk or a wooden spoon until the sugar completely dissolves and the mixture becomes homogeneous, with a creamy consistency. Once we have achieved this texture, we gradually add the flour, continuously mixing to avoid lumps. The next step is to start adding the milk, gradually, mixing constantly so that the composition remains uniform. Finally, we add the vanilla essence, which will give an irresistible aroma to the cream.
Next, we transfer the mixture to a non-stick pot, adding the whole lemon peel, which will infuse the cream with a fresh, citrus taste. We place the pot on the stove at a suitable temperature, ideally low, and stir with a wooden spoon. It is very important to stir constantly, as the cream can stick to the bottom of the pot. When the mixture begins to thicken, we remove it from the heat, take out the lemon peel, and add the butter, stirring vigorously until it completely melts. We let the cream cool, and when it is warm, we can divide it into two equal parts. One part we will leave plain, while in the other part we will add a few tablespoons of cocoa, mixing until the color becomes uniform.
Once the cream is completely cooled, we take care of assembling the Zuppa Inglese. We start by soaking the ladyfingers or even a base of sponge cake, being careful not to soak them too much so that they do not fall apart. We place a layer of ladyfingers in a cake pan, then add a generous layer of plain cream, followed by another layer of ladyfingers. We continue with the cocoa cream, then add ladyfingers again, so that we have a final layer of cream on top. It is important to ensure that we use a brush to sprinkle the ladyfingers with the chosen liqueur for an extra flavor.
After we finish assembling, we cover the pan and let it chill in the refrigerator for at least 4-5 hours to set well. When it is ready, we carefully invert the pan onto a flat plate and, with a sharp knife, cut the cake into portions. We can serve it with a drizzle of whipped cream on top for a pleasant contrast. If we wish, we can also opt for individual portions using larger cups, leaving the last layer with cream. It is also possible to choose to make only one version of the cream, customizing the recipe according to everyone's preferences. This cake will surely be a treat for the taste buds!
