Dried Bean Zacusca – A Recipe Full of Flavor

Dried bean zacusca is a traditional delicacy, a dish that brings together intense flavors and an unmistakable aroma, perfect for enjoying on fresh bread or as a side dish with various meals. This recipe is not only a method of preserving vegetables but also a way to enjoy the seasonal delights, regardless of the time of year. Let’s discover together how you can make a delicious, flavorful, and colorful zacusca!

Preparation time: 1 hour
Cooking time: 2 hours
Total time: 3 hours
Number of servings: 10 jars of 400g

Ingredients:
- 1 kg dried beans
- 5 kg bell peppers
- 1 kg onions
- 1 l oil
- Salt (to taste)
- Bay leaves (2-3 leaves)
- Peppercorns (5-6)
- Sugar (optional, for a sweeter taste)

Preparing the ingredients:
1. Carefully select the dried beans, removing any damaged or unsuitable ones. After selecting the beans, wash them well under cold running water.
2. Place the beans in a large pot, covering them with water. It is recommended to soak them for a few hours before boiling to reduce cooking time. Boil the beans until they are soft, about 1-1.5 hours.
3. Meanwhile, prepare the bell peppers. Roast them in the oven or on the grill until the skin is slightly charred. This step will enhance the flavor. Once roasted, let them cool slightly, then peel and chop them into smaller pieces.
4. Peel and finely chop the onions. It is essential to sauté them well to add extra flavor to the zacusca.

Making the zacusca:
1. In a large pot, heat the oil and add the chopped onions. Sauté the onions over medium heat, stirring constantly until they are golden and translucent.
2. Add the chopped bell peppers, mixing well. Cook the mixture for about 15-20 minutes until the peppers soften and combine with the onions.
3. After that, mash the boiled beans (you can use a blender or a fork, depending on the desired texture) and add them to the pot. Mix all the ingredients well.
4. Season with salt, add the bay leaves and peppercorns. If you want a sweeter zacusca, now is the time to add a little sugar, to taste.
5. Simmer the mixture on low heat, stirring occasionally, until the oil rises to the surface. This can take between 30 and 45 minutes.

Preserving the zacusca:
1. While the zacusca is simmering, prepare the jars. Make sure they are well washed and sterilized. You can do this by boiling them in water for 10 minutes or using the oven.
2. When the zacusca is ready, fill the jars, leaving about 1 cm space from the top. Seal the jars with sterilized lids.
3. Place the jars in a large pot, fill it with water, and boil them in a steam bath for 30 minutes, starting from the moment the water begins to boil. This step will ensure proper preservation of the zacusca.
4. After the time is up, carefully remove the jars and let them cool completely at room temperature.

Practical tips:
- Ensure all ingredients are fresh for a high-quality zacusca.
- You can experiment with other vegetables, such as carrots or eggplants, to add a personal touch to your recipe.
- If you prefer a spicier flavor, you can add chopped hot peppers to the bell pepper mixture.

Perfect pairings:
Dried bean zacusca pairs wonderfully with a slice of fresh bread, cottage cheese, or telemea cheese. You can also serve it alongside olives and a summer salad for a tasty and balanced meal.

Nutritional benefits:
Beans are an excellent source of plant-based protein, fiber, and essential micronutrients, while bell peppers provide a significant amount of vitamins, especially vitamin C. This zacusca is not just a delicacy but also a healthy choice, ideal for satisfying your craving for something tasty and nourishing.

Frequently asked questions:
- How can I improve the texture of the zacusca?
For a smoother zacusca, mash the beans and bell peppers together until you achieve a homogeneous mixture.
- Can I use canned beans?
While it is possible, the recommendation is to use dried beans, as they will provide a better taste and texture.
- What other spices can I add?
You can try adding garlic or herbs like oregano or basil to diversify the flavor.

I encourage you to put your personal touch on this recipe, to experiment, and to enjoy every moment spent in the kitchen. Enjoy your meal!
