Delicious Cozonaci: a traditional dessert with enticing flavors

Cozonac is a symbol of holidays and the joys spent with loved ones. This cozonac recipe combines tradition with flavor, offering a unique culinary experience. Whether it's for holidays, birthdays, or simply a family Sunday, cozonac is always welcome. Let's discover together how we can prepare this wonderful dessert!

Total preparation time: 3 hours (including rising)
Preparation time: 30 minutes
Baking time: 1 hour
Number of servings: 8-10

Ingredients for the dough:
- 1 kg flour
- 50 g fresh yeast
- 200 g sugar
- 350 ml milk
- 100 g butter
- 100 g lard
- 2 eggs
- 1 teaspoon salt
- Grated zest of one orange and one lemon
- Rum essence
- Vanilla essence

Ingredients for the filling:
- 350 g ground walnuts (you can use roasted walnuts for a more intense flavor)
- 150-200 g sugar (depending on preference)
- 2 tablespoons cocoa powder
- 1 teaspoon cinnamon
- Rum essence (to taste)
- 70 g milk
- 70 g butter

For serving:
- Colored Turkish delight (optional, but adds a festive touch)

Step-by-step preparation:

1. Preparing the yeast: In a large bowl, sift the flour to aerate it. In a small bowl, prepare the yeast: dissolve the fresh yeast with 2 tablespoons of sugar and a little warm milk. Mix well and let it stand for 10-15 minutes until it becomes frothy.

2. Heating the milk: Meanwhile, heat 350 ml of milk in a pot. Add the remaining sugar and stir until completely dissolved. Add the citrus zest (orange and lemon) and let it cool slightly.

3. Preparing the dough: After the yeast has risen, make a well in the flour and pour in the yeast mixture. Add the salt, eggs, warm milk, and the rum and vanilla essences. Start kneading, gradually adding the melted fat (butter and lard). Knead the dough for 10-15 minutes until it becomes elastic and smooth.

4. Rising the dough: Cover the dough with a clean towel and let it rise in a warm place for about 1 hour, or until it doubles in size.

5. Preparing the filling: In another bowl, heat 70 g of milk with 70 g of butter. Add the sugar, cocoa powder, and cinnamon over the roasted and ground walnuts. Mix well, then add the milk with the melted butter and rum essence. Mix until you obtain a smooth cream.

6. Shaping the cozonaci: Once the dough has risen, divide it into 4 equal pieces. Roll each piece on a lightly oiled surface into a rectangle. Place a portion of the walnut cream on each piece of dough, add a few cubes of colored Turkish delight if using, and roll tightly.

7. Twisting the rolls: Take 2 rolls and twist them around each other, then place them in a baking tray lined with parchment paper.

8. Second rising: Brush the cozonaci with beaten egg mixed with a tablespoon of milk and let them rise for another 30 minutes.

9. Baking: Preheat the oven to 180 degrees Celsius. Brush the cozonaci again with egg and sprinkle with sugar mixed with cinnamon. Bake the cozonaci for 1 hour or until golden and pass the toothpick test (when inserted in the center, it should come out clean).

10. Cooling: Once the cozonaci are ready, remove them from the oven and let them cool in the tray for 10 minutes, then transfer them to a rack to cool completely.

Useful tips:
- Use high-quality flour for a fluffier dough.
- If you want a more aromatic cozonac, you can also add a few drops of almond essence.
- You can experiment with various fillings: raisins, chocolate, or candied fruits, to customize the recipe to your taste.

Nutritional benefits:
Cozonac contains nutritious ingredients, such as walnuts, rich in omega-3 fatty acids and antioxidants, which can contribute to heart health. Whole grain flour, if used, adds important fiber to the diet.

Ideal pairings:
Cozonac pairs perfectly with a cup of warm milk or a fragrant tea, and for a festive moment, a glass of sweet wine can be the ideal accompaniment.

Frequently asked questions:
- Can I use dry yeast instead of fresh yeast?
Yes, you can use 15-20 g of dry yeast. Mix it with the flour and follow the recipe steps.

- How can I keep the cozonac fresh for a longer time?
You can keep it in plastic wrap or in a metal box at room temperature. Avoid the refrigerator, as moisture can alter the texture.

This is a dessert that brings joy and warmth to any home. Whether you prepare it for loved ones or to enjoy alone, cozonac will always bring smiles and unforgettable moments. Enjoy!
