Lamb haggis is a traditional recipe, full of flavors and stories, that reminds us of festive family meals. Known for its rich texture and intense taste, this dish is a must-have during Easter and for many other special occasions. In this recipe, I will share with you the secret to the perfect haggis, just like my mother used to make, which I have improved over the years.

Preparation time: 30 minutes
Baking time: 60 minutes
Total time: 90 minutes
Number of servings: 8-10

Ingredients

- 1.5 kg lamb organs (liver, kidneys, lungs)
- 1 bunch of green onions
- 1 bunch of green garlic
- 5 white onions
- 400 g smoked bacon
- 6 eggs
- Salt and pepper, to taste

Preparation steps

1. Boiling the organs: Start by cleaning the lamb organs, then place them in a large pot with cold water. Add a teaspoon of salt and let them simmer for about 30 minutes. Make sure not to overcook them, as we want to keep their texture.

2. Preparing the vegetables: While the organs are boiling, clean and chop the white onions into small cubes. Similarly, finely chop the green garlic and green onions. It is important that these vegetables are finely chopped, as they will contribute to a uniform texture.

3. Sautéing the vegetables: In a large skillet, add the diced bacon and sauté it over medium heat without adding oil. When the bacon becomes crispy, add the white onions and sauté until they become translucent. Finally, add the green garlic and green onions, sautéing for a few more minutes. The flavors will combine, providing a delicious base for the haggis.

4. Chopping the organs: Once the organs are boiled, drain them and let them cool slightly. Use a meat grinder or a sharp knife to chop the boiled organs. It is essential that they are finely chopped to integrate well into the mixture.

5. The final mix: In a large bowl, combine the chopped organs with the sautéed vegetables. Add the 6 beaten eggs, salt, and pepper to taste. Mix all the ingredients well, ensuring that each component is evenly distributed.

6. Preparing the baking dish: Preheat the oven to 180°C. Line a loaf pan with parchment paper or grease it with a little oil to prevent sticking. Pour the mixture into the pan, leveling the surface well with a spatula.

7. Baking the haggis: Place the pan in the preheated oven and bake the haggis for about 60 minutes, or until the surface is golden and crispy. Check occasionally to ensure it doesn't burn.

8. Cooling and serving: Once the haggis is ready, remove it from the oven and let it cool in the pan for 15-20 minutes. Then, transfer it to a platter and let it cool completely before slicing. It is recommended to serve it with mustard or a fresh salad to complement the flavors.

Useful tips

- Choosing the organs: Lamb organs are rich in nutrients and have an intense flavor. Make sure to use fresh ingredients, as their quality directly influences the final taste of the haggis.
- Recipe variations: If you want to add a personal touch, you can try adding some chopped green or black olives to the mixture, or even herbs like dill or parsley.
- Storing the haggis: The haggis can be stored in the refrigerator for a few days, and its flavor becomes even more intense as it sits. You can serve it cold or reheat it before serving.

Nutritional information

Lamb haggis is an excellent source of protein, vitamins, and minerals. Lamb organs contain a significant amount of iron, zinc, and vitamin B12, all essential for a balanced diet. However, due to the fat content in bacon, it is recommended to consume it in moderation.

Frequently asked questions

- Can I use other types of meat? Although tradition says that haggis should be made from lamb organs, you can experiment with other types of meat, such as chicken or beef, but the recipe will no longer be considered authentic haggis.

- How can I make the haggis less fatty? To reduce the fat content, you can replace the bacon with lean pork or use less bacon and more vegetables.

- What drinks pair well with lamb haggis? A dry white wine or a pale beer are excellent choices to accompany the haggis. Additionally, a fruit compote or lemonade can perfectly complement the meal.

Personal note

For me, lamb haggis is not just a dish, but a symbol of family reunion and traditions passed down from generation to generation. Each slice of haggis is filled with memories and stories, and its aroma instantly takes me back to my childhood when my mother lovingly prepared this special dish. I encourage you to try this recipe and bring a piece of tradition into your home. You may find that haggis is not just a simple dish, but a culinary experience that will warm your heart and soul. Enjoy your meal!
