Croissants with Jam
To prepare these delicious fluffy croissants, start by gathering all the necessary ingredients. You will need fresh cream, melted and cooled butter, sifted flour, salt, eggs, warm milk, and fresh yeast. If you are using a bread machine, the order of the ingredients is essential: start with the cream, then add the melted and cooled butter. Continue with the sifted flour, salt, eggs, and finally, the warm milk in which you have dissolved the yeast mixed with sugar. Set the dough program and let the machine work its magic.
If you don’t have a bread machine, don’t worry! You can prepare the dough manually. Start by rubbing the yeast with the sugar, then dissolve the mixture with ½ of the warm milk. Add a few tablespoons of flour and mix well. Cover this mixture and let it rise until it becomes frothy. Once the yeast has risen, add it to the other ingredients and knead the dough until it becomes elastic and non-sticky.
After you have a nice dough, place it in a bowl greased with a little oil. Cover it well and let it rise in a warm place until it doubles in volume. This step is important for achieving fluffy and airy croissants. After the dough has risen, take it out onto a lightly oiled work surface and divide it into several equal pieces. Round each piece and brush the top with a little oil to prevent drying.
The next step is to roll each piece of dough into a round sheet about 3-4 mm thick. Cut the sheet into triangles and add a teaspoon of jam at the base of each triangle. Rolling them towards the tip of the triangle, you form the croissants, which you will transfer to a baking tray lined with parchment paper. Let them rise again for 25-30 minutes in a warm place until they double in volume.
After the croissants have risen, brush them with a mixture of beaten egg yolk and milk to give them a beautiful color when baked. Preheat the oven to 185 degrees Celsius and bake the croissants until golden and browned. Serve them warm, either plain or dusted with powdered sugar, alongside a cup of milk, yogurt, or hot tea. These croissants remain fluffy and delicious even after several days, and any leftovers can be frozen to enjoy later. When you want to serve them, you can put them directly in the microwave for a minute, and they will be just as delicious as the day you baked them.
