Suberek with meat: a delicious delight of tender dough and savory filling

Suberek is a traditional recipe, rich in history and flavor, that combines simple ingredients to create an unforgettable culinary experience. This meat pie is perfect for serving at a festive meal or as a quick snack. Today, I will share my recipe for suberek with meat, which I have lovingly adapted to achieve a delicious result.

Preparation time: 30 minutes
Baking time: 20 minutes
Total time: 50 minutes
Servings: 8

Ingredients for the dough:
- 400-450 g flour
- 200 ml warm water
- 1 teaspoon salt
- 1 teaspoon sugar
- 2-3 tablespoons olive oil

Ingredients for the filling:
- 350 g minced pork (you can also use beef or chicken)
- 1 small onion
- 1 small pepper or half a pepper
- 1/2 can of canned tomatoes (about 200 g)
- Salt, pepper, oregano to taste
- 2 tablespoons cooking cream
- 2 tablespoons sour cream for serving
- Olive oil and corn oil for frying

Step 1: Preparing the dough
In a large bowl, combine the flour with salt and sugar. Gradually add the warm water and olive oil, mixing with a spatula or with your hands until you achieve a smooth dough. Knead the dough for 5-7 minutes until it becomes elastic and no longer sticks to your hands. Form a ball, cover it with a damp towel or plastic wrap, and let it rest for 20 minutes.

Step 2: Preparing the filling
While the dough rests, move on to the filling. Peel and finely chop the onion and pepper. In a pan, heat 2-3 tablespoons of olive oil over medium heat. Add the onion and pepper and sauté for 5 minutes until they become soft and translucent.

Add the minced meat to the pan, mix well, and cook until it is lightly browned, about 10 minutes. At this point, add the canned tomatoes, oregano, salt, and pepper. Let everything simmer on low heat, adding a splash of water if necessary, until the mixture becomes homogeneous and well-cooked. When the filling is ready, add the cooking cream, mix well, and let it cool slightly.

Step 3: Shaping the suberek
Divide the rested dough into 8 equal parts. On a floured work surface, roll out each piece of dough into a round shape, about 20 cm in diameter. Place 2 tablespoons of the meat filling on one half of the dough circle, leaving the edge free.

Fold the dough to form a semicircle, pressing the edges well to seal the filling. Repeat this process with all the pieces of dough and filling.

Step 4: Frying the suberek
In a deep pan or pot, heat enough corn oil to cover the suberek. When the oil is hot, carefully add the suberek, 2-3 at a time, and fry for 3-4 minutes on each side until golden and crispy. Remove them to a paper towel to absorb excess oil.

Step 5: Serving the suberek
After the suberek has cooled slightly, place them on a platter and, for an extra touch of flavor, add a few tablespoons of sour cream on top. This will give them a creamy texture and a perfect taste, reminding you of traditional grandmother's recipes.

Suggestions and variations
The suberek can be adapted according to personal preferences. Try replacing the pork with feta cheese or ricotta, adding fresh dill for a unique taste. Additionally, for extra flavor, you can add some olives or spinach to the filling.

This dish pairs perfectly with a fresh vegetable salad or a yogurt sauce with garlic, which will balance the rich taste of the suberek. Plus, a refreshing drink like mint tea or ayran will perfectly complement the meal.

Calories and nutritional benefits
Each serving of suberek contains approximately 350-400 calories, depending on the ingredients used. The minced meat provides essential proteins, while the vegetables contribute to the intake of vitamins and minerals. This recipe is a delicious option for a hearty meal, but remember to consume it in moderation, considering the fat content.
